Almond Cake

Finely grind the almonds in a food processor
- 1/2 pound (1 3/4 cups) blanched whole almonds
- 6 large eggs, separated
- 1 1/4 cups superfine sugar
- Grated zest of 1 orange
- Grated zest of 1 lemon
- 4 drops almond extract
- Confectioners’ sugar for dusting
Spinach and Brie Chicken with tomato orzo

1. Set a large saucepan of salted water to boil
- Coarse salt and ground pepper
- 8 thin chicken cutlets (1 1/2 pounds total)
- 2 tablespoons Dijon mustard
- 1 package (10 ounces) frozen leaf spinach, thawed and squeezed dry
- 4 ounces Brie cheese, cut into 8 slices
- 1 cup orzo
- 2 plum tomatoes, cored and chopped
- 1/4 cup chopped fresh parsley
- 1 tablespoon butter
- 1 tablespoon fresh lemon juice
Meatballs and Peppers

Combine the first 6 ingredients in a large saucepan
- 1 cup thinly sliced green bell pepper
- 1 cup thinly sliced red bell pepper
- 1 cup thinly sliced yellow bell pepper
- 1 1/3 cups water
- 1 (10 1/2-ounce) can beef consomme
- 1 bay leaf
- 1 (1-ounce) slice whole-wheat bread
- 1 pound ground round
- 1 tablespoon finely chopped onion
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 large egg white
- 1 garlic clove, crushed
- 2 teaspoons olive oil
- 2 tablespoons all-purpose flour
- 1/4 cup water
- 1/3 cup finely chopped fresh or 1 1/2 teaspoons dried basil
- 2 teaspoons white wine vinegar
BBQ Chicken Pizza

1.Preheat oven to 450 degrees 2
- 1 (12 inch) pre-baked pizza crust
- 1/2 cup barbecue sauce
- 1/2 cup diced grilled chicken
- 1/4 cup chopped red bell pepper
- 1/4 cup chopped green bell pepper
- 1/4 cup chopped red onion
- 1 cup shredded Monterey Jack cheese or any other good melting cheese
Steak Fingers

In a large skillet, pour oil to a depth of 1/2 inch
- Milk gravy:
- Vegetable oil for frying
- 2 large eggs
- 2/3 cup whole milk
- 1 1/2 cups crushed saltine crackers (about 1 sleeve)
- 1 1/4 cups all purpose flour
- 1 1/2 tsp salt
- 1/2 tsp paprika
- 1/2 tsp ground black pepper
- 2 pounds cube steak, cut into 2 inch fingers
- 4 Tbsp flour
- 3 cups whole milk
- 1 tsp ground black pepper
- 1/2 tsp salt
Creamy Vegetable Dill Dip

Combine all ingredients in medium bowl
- 2 Tbsp. Dijon mustard
- 1 pkg. Knorr® Vegetable Soup Mix
- 1 container (16 oz./500g) sour cream
- 2 Tbsp. chopped fresh dill or 1/2 tsp. dried dill weed
Sausage and Cheese Deep-Dish Pizza

Sausage and Tomato Sauce: 1
- Sausage and Tomato Sauce:
- 1 Tbsp olive oil
- 1 pound Italian sausage, skinned and crumbled (or other choice of meat)
- 1 red bell pepper, chopped
- 2 large garlic cloves, finely chopped
- 1/2 tsp dried oregano
- 1 can (28 ounces) Italian peeled tomatoes with juice, chopped
- Salt
- Chicago Deep Dish pizza dough (recipe follows)
- 4 ounces provolone
- 4 ounces mozzarella
- Deep Dish pizza dough:
- 1 package active dry yeast
- 1 cup warm water (105° to 115°)
- 2 Tbsp olive oil
- 3-3 1/2 cups unbleached all purpose flour
- 1/2 cup whole wheat flour
- 2 tsp salt
Fresh Strawberry Lemonade

Combine lemon juice, water, and 3/4 of the strawberry puree
- 1 1/2 cup freshly squeezed lemon juice
- 6 cups of water
- 10 ounces frozen strawberries, pureed (fresh would do perfectly well)

Banana Pudding

1.In a large bowl, beat cream cheese until fluffy
- 1 (8 ounce) package cream cheese
- 1 (14 ounce) can sweetened condensed milk
- 1 (5 ounce) package instant vanilla pudding mix
- 3 cups cold milk
- 1 teaspoon vanilla extract
- 1 (8 ounce) container frozen whipped topping, thawed
- 4 bananas, sliced
- 1/2 (12 ounce) package vanilla wafers
Chocolate Drizzled Pumpkin Cream Puffs

Line a large baking sheet with parchment paper; set aside
- Chocolate Sauce:
- 1 cup water
- 1/2 cup butter
- 1/8 tsp salt
- 1 cup all purpose flour
- 4 eggs
- 3 cups whipping cream
- 2 1/4 cups canned pumpkin
- 1 Tbsp pumpkin pie spice
- 1/4 tsp salt
- 9 egg yolks
- 3/4 cup sugar
- 4 ounces semi sweet chocolate, chopped
- 1/4 cup water
- 3 Tbsp butter
- 1/2 tsp sugar
- 1/2 tsp vanilla
