Almond Flax Burgers - Raw

Add ingredients to food processor and process until well blended
- 2 cloves garlic
- 1 cup raw almonds
- 1/2 cup ground flaxseed
- 2 Tbs. balsamic vinegar
- 2 Tbs. coconut oil or hemp oil
- sea salt (to taste)
Balsamic Vinaigrette

. In a blender or a jar with a lid combine all ingredients
- 1/2 cup extra virgin olive oil
- 1/4 cup balsamic vinegar
- 1 Tbs mustard
- 1 Tbs maple syrup
- Salt and pepper to taste
Applesauce Cake

Preparation: Preheat the oven to 375 degrees
- 4 eggs
- 1 1/2 cups homemade applesauce (store bought will work as well)
- 2 cups almond flour
- 1 tablespoons cinnamon
- 1/2 teaspoon pumpkin pie spice
- 1 1/2 teaspoon baking soda
- 1 teaspoon vanilla
- 1/4 cup coconut oil
- 2 tablespoons maple syrup
- 1/2 teaspoon salt
Roasted Vegetables with Tomato Charmoula

Combine the charmoula ingredients in a small bowl and mix well
- Charmoula:
- 1/2 cup crushed tomatoes (I used Muir Glen Fire Roasted)
- 1/4 cup vegetable broth
- 1 tablespoon ground cumin
- 1 tablespoon paprika
- 1/4 teaspoon black pepper
- 1 teaspoon minced ginger root (or 1/2 tsp. ground ginger)
- 1/2 teaspoon marjoram
- 1/4 teaspoon cayenne (optional or to taste)
- 1/2 teaspoon salt
- 1 small eggplant, cut into 1-inch cubes (peeling optional)
- 1 small cauliflower, cut into florets
- 2 medium zucchini, cut into 1-inch cubes
- 1 red or green bell pepper, seeded and cut into 1-inch pieces
- 1 1/2 cups chickpeas, drained
- 1/2 cup vegetable broth

Instructions Place the cauliflower, carrot and kale in a large bowl
- 1-1/2 cups shredded cauliflower
- 1 cup shredded carrot
- 1/2 cup shredded kale
- 1/4 tsp sea salt
- 3 tbsp coconut flour – or- 3tbsp ground pepitas and 2tbsp tapioca flour

Baked Fried Eggplant

Instructions Preheat the oven to 425 degrees
- DRESSING:
- 1 medium eggplant, sliced into about 1/3 inch disks (I like to leave the peel on)
- oil spray
- 6 T. extra virgin olive oil or grapeseed oil, plus extra for drizzling
- 2 T. apple cider vinegar
- 1 T. lemon juice
- 1/4 t. + 1/8 t. sea salt
- 1 t. dried parsley
- 1 t. dried basil
- 1/2 t. dried oregano
- 1/8 t. garlic powder
- a few grinds of black pepper
- COATING:
- 1 c. almond meal
- 1/2 t. salt

- 1-3 T cinamon(depending on yr taste)
