Cream of Mushroom Soup

Saute the onions in the olive oil until soft, about 5 to 10 minutes
- 1/4 cup extra virgin olive oil
- 1 medium onion, chopped
- 4 cloves garlic, chopped
- 3 large carrots, chopped
- 1 pound cremini mushrooms, chopped
- 5 cups water or stock
- few sprigs fresh thyme (pull the leaves from the stems)
- few sprigs fresh rosemary
- 1 teaspoon freshly ground black pepper
- 3 teaspoons Herbamare, or to taste
- 1/2 cup raw cashews, soaked for 2 hours (disgard liquid)
- 2 tablespoons sweet rice flour
Chia Banana Coconut Pudding

Blend all ingredients except coconut flakes together until smooth
- 4 tablespoons chia seeds
- 3/4 - 1 cup coconut milk
- 1 banana
- 1 tablespoon maple syrup (optional)
- Pinch celtic sea salt
- Pinch cinammon
- 1/4 cup coconut flakes
Broccoli Soup (recipe #2)

Lightly steam the broccoli, for 5-6 minutes
- 1/2 Avocado
- 6 -8 Decent size Broccoli Heads
- 1/3 Red Onion
- 1 Celery Stick
- Big Handful of Spinach
- An Inch of Root Ginger
Maple Butternut Squash & Apple Casserole

Preheat oven to 375F. Wash squash and place in microwave on high for 3 minutes to soften
- 1.5 pounds butternut squash, washed, peeled, chopped into 1” cubes
- 3 tbsp Earth Balance
- 1 tsp curry powder (I used Arvinda’s Garam masala)
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 3/4 tsp sea salt
- 3 small apples, cored and chopped into cubes
- 3.5-4 tbsp pure maple syrup
- 1 tbsp apple cider vinegar
- 2-3 cups cooked Brown basmati rice
- 3-4 tbsp pumpkin seeds
- 1 tbsp Sucanat or brown sugar, optional

Raw Spinach Dip

Place onions and garlic in the food processor and process until uniformly sized small pieces
- 2 cups packed Spinach
- 1 can Water Chestnuts
- 1 (or 2 small) cooking Onions – peeled and chopped
- 2 Garlic cloves – peeled and chopped
- 2 cups Hemp oil Mayo
- 1/2 – 1 tsp Salt
Red Bean Chipotle Burgers

Preheat oven to 425 F. Put the onion and garlic into a food processor and pulse to chop coarsely
- 1 small onion, peeled and cut into quarters
- 1 clove garlic
- 1 16-ounce can light-red kidney beans, drained and rinsed
- 1/2 cup oatmeal, uncooked
- 1/2 cup cooked brown rice
- 1-3 teaspoons chopped chipotles (from canned chipotles), to taste
- 1 tablespoon tomato paste
- 1/2 teaspoon salt (optional for salt-free diets)
- 1/4 teaspoon oregano
- 1/4 teaspoon thyme
- 1/8 cup flour (I used white whole wheat but you may use gluten-free flour)
