Southern Greens

Prepare your vegetables beforehand because this recipe moves fast
- 1/2 cup vegetable broth (I used Imagine's No-Chicken broth)
- 1/2 small red onion, thinly sliced
- 3 cloves garlic, minced
- 1/2 tablespoon minced ginger root
- 1 teaspoon smoked paprika
- 10 ounces greens (about 2 small bunches mustard, turnip, or collard greens), stemmed and chopped
- 1 teaspoon white balsamic vinegar
- 2 tablespoons dried cranberries
Avocado-Chocolate Pudding

Add all ingredients to your blender and blend until its creamy
- 1 Avocado
- 1/4 cup raw cocao powder
- 1/4 cup maple syrup to taste
- 1/4 cup water
- 1 tbsp vanilla
- dash of Celtic Sea Salt
- optional::1 Tbsp Maca for some super power:)
Grain Free, No Bake breakfast Cookie

Instructions Mix the dry ingredients together (flour, stevia, salt, and cinnamon)
- Additions:
- 1/2 c. raw buckwheat groats, ground into flour (can use ground oats if not grain-free)
- 1/32 t. stevia extract (this is usually equivalent to the tiny spoon that comes embedded in the bottle), or about 8 liquid drops
- 1/4 t. sea salt
- 1/2 t. cinnamon
- 1/3 c. mashed banana or applesauce
- 1 (rounded) T. raw almond butter
- 1 t. maple syrup
- 1/2 t. vanilla extract
- 1-2 T. milk of choice
- raisins, walnuts, chocolate chips, sunflower seeds, sesame seeds, pumpkin seeds, dried cranberries
Spiced Apple and Butternut Squash Soup

In a large saucepan, melt the coconut oil over medium heat
- 2 tablespoons coconut oil
- 1 small onion, chopped
- 2 small or 1 large apple, peeled and cut into cubes
- 1 medium (about 2 pounds) butternut squash, peeled, deseeded and cut into cubes
- 2 teaspoons ground cinnamon
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- a pinch of ground cloves
- a pinch of ground allspice
- 1 quart (4 cups) of chicken broth, preferably homemade
- salt and pepper to taste
- Sage leaves for garnish (optional)
Vegetable Salad with Macadamia Dressing

Whisk dressing ingredients in a bowl and season with salt
- For the Dressing:
- 3 tablespoons fresh citrus juice (any combination of lime, lemon, and orange)
- 1 teaspoon raw apple-cider vinegar
- 1/2 teaspoon honey
- 2 tablespoons extra-virgin olive oil
- 1 1/2 tablespoons chopped fresh dill, plus sprigs for garnish
- 1 1/2 tablespoons chopped fresh flat-leaf parsley, plus leaves for garnish
- 4 fresh basil leaves, sliced, plus leaves for garnish
- 1/4 cup raw macadamia nuts, toasted and finely chopped
- Coarse salt
- For the Salad
- 1/2 large fennel bulb, cored and cut into 1/2-inch slices
- 1/2 pound asparagus, trimmed
- 1/4 pound green beans, trimmed
- 1/2 pound small carrots, scrubbed Coarse salt

Raw Carrot Coconut Cookies

1. In food processor fitted with the s-blade, add grated carrots and dates
- 6.5 ounces of carrots, peeled then grated (3 medium)
- 14 soft dates, pitted and soaked in filtered water for an hour
- 4.5 ounces unsweetened shredded coconut
- 1 cup sesame seeds
- 1 teaspoon nutmeg
- (I didn't make these "hot and spicy" but you totally could - for the hot and spicy factor, add in some ginger and/or a pinch of cayenne)
Raw Avocado Fries

Slice avocado into fries and roll in parmesan
- RAW VEGAN CHIPOTLE PARMESAN
- 2 T. walnuts
- 2 T. nutritional yeast
- 1/4 t. garlic powder
- 1/4 t. chipotle powder (or 1/8-1/4 t. cayenne, depending on how spicy you like it)
- 1/8 t. salt
- Using a coffee grinder, whir the walnuts and the nutritional yeast until powdery. Stir in the rest.

- 1 cup cooked quinoa
- 1 tbsp extra virgin olive oil
- 1 lemon, juice only
- 2 tsp chia seeds
- Toasted almonds, to garnish
- A pinch tsp sea salt
Zucchini Pizza Crist

Instructions Place the grated zucchini in a strainer
- 2 c. zucchini, finely grated, lightly packed
- 1/2-3/4 c. almond meal
- 1 egg, lightly beaten, (vegans, try 1 flax or chia egg)
- 1 T. avocado oil (or another high smoke point oil such as walnut or coconut)
- 1/2 t. oregano
- 1/4 t. garlic powder
- 1/8 t. salt (you don’t need much because the zucchini will retain some)
