Beetballs

Place the mushrooms in a small saucepan and add 1 cup of water
- 1/2 ounce dried porcini mushrooms
- 1 medium raw beet
- 1/2 cup raw pecans, almonds, or other nuts (see note for low-fat alternative)
- 1/2 medium red or yellow onion, coarsely chopped
- 2 cloves garlic, chopped
- 1 cup cooked chickpeas
- 2 tablespoons ground flax seeds
- 1 tablespoon nutritional yeast
- 2 teaspoons oregano
- 1 teaspoon smoked paprika (mild or spicy)
- 1 teaspoon salt (or to taste)
- 1/2 teaspoon rubbed sage
- 1/4 – 1/2 teaspoon fennel seeds
- 1/4 teaspoon red pepper flakes (or to taste)
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon hickory smoked salt or Liquid Smoke (optional)
Chia or Hemp Milk

Soak all ingredients in a glass container for about 4 hours or overnight in the fridge
- Quick and Easy Hemp Seed or Chia Seed Milk
- For Chia Milk: 2.5 tbsp chia seeds
- For Hemp Milk: 5 tbsp hemp seeds
- 3 cups of water
- 1.5 tbsp walnuts
- 1 tbsp Artisana, organic raw sesame tahini
- 1/4 tsp vanilla powder or liquid vanilla
- 2 to 4 drops of liquid Stevia, or another sweetener mentioned in the delicious tips.
Tangy Curry Tuna Salad Sandwich

Put yogurt, curry powder, green onions, zest, dill, celery, raisins, tuna and salt into a large bowl and mix well
- 1/4 cup lowfat yogurt
- 1/4 teaspoon curry powder
- 2 tablespoons chopped green onions
- 1/2 teaspoon lemon zest
- 1 tablespoon finely chopped dill
- 1/4 cup chopped celery
- 1 to 2 tablespoons seedless raisins
- 1 can Tongol or Albacore Tuna (salted or unsalted), drained
- Salt to taste
- 6 slices whole wheat sandwich bread
- 6 leaves butter lettuce
Cream of Mushroom Soup

Steam veggies. PUt 2c water in steam pan
- one zucchini
- one small sweet onion
- garlic (I didn't include it, but had I thought of it, I would have added
- 2-3 cloves)
- oyster mushrooms (8 oz. package)
- shiitake mushrooms (8 oz. package)
- baby bella mushrooms (8 oz. package)
- 3 Tbs. Butter
- 1 1/2 tsp. Sea Salt
- Veggie Broth instead of water
- Coconut milk to make it creamy
- Blended steamed potato...perhaps sweet potato
Chickpea Smothered Sweet Potato

Preheat oven to 400˚. Scrub sweet potatoes with running running, pat dry, and pierce several times with a fork
- 2 medium sweet potatoes, preferably rounder
- 1 tablespoons olive oil
- 2 medium shallots
- 1 tablespoon cumin seeds
- 2 teaspoons coriander seeds
- 2 whole cloves
- 1/2 teaspoon red pepper flakes
- 1 tablespoons smoked paprika
- 1/2 teaspoons salt
- 1 cup stewed tomatoes
- 2 tablespoons tomato paste
- 1/2 to 1 cup vegetable broth
- 2 cups chickpeas, drained and rinsed if using canned
- Cilantro, to serve

- 2 large apples, diced (granny smith, fuji, honeycrisp etc.)
- 8 cups packed baby greens (arugula, kale, red romaine...a mix looks pretty)
- 1/4 cup flat leaf parsley
- 1/4 of a medium red onion, thinly sliced
