Grain Free Sushi

Pick out any bones and cut fish into bite sized pieces
- Lemon Juice ‘Cooked’ Fish
- 1/4 pound Ahi Tuna Steak, wild caught
- 1/4 pound Cod, wild caught
- Juice of 2 lemons
- Juice of 2 limes
- Grain Free Sushi Rice
- 1-2 medium celery roots, shredded (to make approx 6 cups) *I would imagine cauliflower would work well too, but haven’t tried it yet
- 2 tablespoons honey
- 2 tablespoons apple cider vinegar
- 1 teaspoon coarse sea salt
- Sushi Fillings
- Fish, as described above
- carrots, cut into matchsticks
- mango, cut into thin slices
- Avocado, sliced
- Green onions, just the white and light green parts, thinly sliced
- Cucumbers, cultured or fresh, thinly sliced

- 2 tbsp apple cider vinegar
- 1 tbsp balsamic vinegar
- 1 tsp mild miso (ex: brown rice miso)
- 3/4 – 1 tsp dijon mustard
- 1/4 tsp cumin
- 1/8 tsp cinnamon
- 1 1/2 tbsp pure maple syrup (or more to sweeten to taste if desired)
- 1/4 tsp (rounded) sea salt (or more to taste)

Creamy Caesar Dressing

Whisk egg yolk with whisk or blender on low speed
- One egg yolk at room temperature (very important it is not cold!)
- 2 teaspoons apple cider vinegar
- 1/3 cup olive oil
- 1/2 tsp mustard or mustard powder
- 1 tablespoon fresh lemon juice
- 2 garlic cloves, finely crushed
- 2 teaspoons Worcestershire
- 2 Tablespoons Parmesan cheese
- salt, pepper and spices to taste.
Chickpea and Potato Salad

Boil the potatoes until tender
- 4 small or 2 medium Yukon gold potatoes
- 15 ounces cooked chickpeas (1 can or about 1 3/4 cups), drained
- 1 medium cucumber peeled, seeded and cut into 1/2-inch cubes
- 8 cherry tomatoes, quartered
- 6 to 8 jumbo black olives, sliced (about 2 ounces)
- 1/4 cup capers, rinsed and drained, chopped if large
- 4 pepperoncini peppers, stemmed and sliced
- 3 to 6 tablespoons harissa, or to taste
- 2 tablespoons Tofu-Cashew Mayo (optional)
- 1/2 tablespoon cider vinegar
- 2 cloves garlic, finely minced
- 1/2 sheet sushi nori, crumbled, or 1/2 teaspoon powdered kelp (optional)
- Salt, to taste

Put all ingredients in small jar with lid and shake until well mixed

Oh She Glows had a recipe for a raw layered taco bowl that called for nut cream
- Cashew or Macadamia cream: (yield: 1 heaping cup)
- 1 cup macadamia (or cashew) nuts, soaked in water for 2-8 hours
- 11-12 tbsp water (use as needed to achieve desired consistency)
- 2-3 tbsp fresh lemon juice, to taste
- fine grain sea salt, to taste (I used just over 1/4 tsp)
- 6-7 large strawberries

Japanese Kelp Noodle

To leave raw, soften kelp noodles in hot water for several hours, replacing hot water regularly
- 1 pkg Kelp Noodles
- 1 Carrot – peeled and grated
- 1/2 Red Pepper – sliced very thin
- 4 Green Onions – sliced thin on a diagonal
- Dressing
- 2 Tbsp Tamari
- 1 Tbsp Rice Vinegar
- 2 tsp Sesame Oil
- 1 tsp fresh Ginger – grated or minced very fine
Paleo Cauliflower Fried Rice

- 1 small head of cauliflower, grated
- Olive oil or bacon fat
- 1 tbsp soy sauce
- salt and pepper, to taste
