Black Bean and Potato Plate

Found this recipe and may substitute jicima for the potatoes
- Potato Wedges:
- 2 medium Russet (baking) potatoes, sliced into wedges
- 1 tbsp grapeseed oil or melted coconut oil
- Sea salt and freshly ground black pepper
- Few pinches of chili powder
- Black Bean Skillet Mixture:
- 1/2 tbsp oil
- 1 cup chopped red onion
- 2 garlic cloves, minced
- 1 red sweet pepper, diced
- 1 (15-oz) can black beans, drained and rinsed
- 2 tsp ground cumin, or to taste
- 1 tsp chili powder, or to taste
- Fine grain sea salt, to taste
- Toppings: Tomatoes/salsa, cilantro, avocado, cashew cream, corn chips, green onion, etc
Homemade Granola Bars

- Raw oatmeal (you could use regular oatmeal, it would still taste great)
- Raw almonds
- 1 1 1 Spoonful raw almond butter (or other nut butter)
- 1 1 1 Blended banana
- Raisins
- Goji Berries
- Sunflower seeds
- Sesame seeds
- to honey or Stevia to taste
- Cinnamon
- Cardamom
Fall Detox Salad

1. Add the grate/shred blade to food processor
- brussels sprouts (about 18), washed and stems removed
- carrots (about 2 large), peeled
- 1 apple, diced (I used Honeycrisp)
- 1 large celery stalk, diced
- 1/2 cup sunflower seeds
- 4-6 tbsp raisins
- 2-4 tbsp fresh lemon juice, to taste
- 1/4 tsp fine grain sea salt or Herbamare, or to taste
- 1 tsp fresh Thyme leaves (optional), or other herbs of choice
- Pure maple syrup, to taste
Sweet Potato Pumpkin Porridge

1. Peel and chop up butternut squash and sweet potatoes
- 4 cups chopped butternut squash
- 5 1/2 cups chopped sweet potatoes
- 1-2 cups water
- cover and steam
- 1 1/2 teaspoon cinnamon
- 1/4- 1/2 teaspoon nutmeg (optional)
- 1/2 teaspoon salt
- 2-3 tablespoons honey or maple syrup (or any other sweetener you like)
- 1-3 tablespoon potato or tapioca starch (or corn starch, but then this isn't grain free)
- 1 pinch powdered vanilla or 1 teaspoon vanilla extract
- Almonds, raisins, or coconut (optional)
Scallion Pancakes

1. Begin by preparing your cauliflower
- pronounced in this version.
- INGREDIENTS
- 226 g (8 oz) cauliflower
- 1/4 cup water
- 40 g scallions, chopped
- 40 g onion, chopped finely (optional)
- 2 eggs
- 1/4 teaspoon sea salt
- 2 tablespoon coconut oil
Quinoa, Strawberry and Asparagus Salad

1. Rinse quinoa in a fine mesh strainer and place into a medium pot
- 1 cup uncooked quinoa (or try speltberries, but note they are not GF)
- 1/2 tbsp extra virgin olive oil
- 1 leek, sliced into rounds or half moons
- 2 garlic cloves, minced
- 1 bunch asparagus, ends broken off and chopped into 1-inch pieces
- 1 cup diced strawberries (optional)
- 3/4 cup fresh or frozen peas
- 1 cup fresh parsley, roughly chopped
- 2-3 tbsp extra virgin olive oil, to taste
- 3 tbsp fresh lemon juice
- 1/2 tbsp pure maple syrup (or other sweetener)
- 1/4 tsp fine grain sea salt & lots of pepper, to taste
- lemon zest, for garnish
Hummus

Blend. Add more of the reserved liquid if needed
- 2 15 oz cans garbanzo beans, one drained (reserve juice) and one undrained
- 1/4 cup tahini (optional)
- 1/4 cup lemon juice
- 4 cloves garlic (or to taste)
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1/8 tsp cayenne
- 1/2 tsp black pepper (or less, to taste)
- 1/2 tsp salt
Chipotle Burrito Bowl

The woman who developed this recipe was using Chipotle's burrito bowl as her guide
- 1 can of Chipotle Peppers in Adobo sauce
- 2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon ground black pepper
- 1/2 teaspoon fine sea salt
- 1/4 cup filtered water
- 2 boneless chicken breasts or 1 pack of firm tofu
- Cilantro Lime Quinoa
- 1/2 cup dry white quinoa
- 1 cup filtered water
- 1/2 lime, juiced
- 2 tablespoons finely chopped fresh cilantro
- 1/4 teaspoon fine sea salt
Spicy Sunbutter Noodles

Instructions Mix all of the ingredients together for the sauce until they emulsify and combine smoothly
- Sauce:
- 2 T. Sunbutter (you can also use peanut butter or almond butter if you prefer)
- 1 1/2 T. lime juice
- 1 1/2 t. soy sauce
- 1 T. water
- 1/2 t. garlic, minced
- 1/2 t. fresh ginger, minced
- 1/8 t. red pepper flakes
- 5 drops liquid stevia (or 1 t. maple syrup)
- Noodles:
- 1 zucchini, spiralized or ribboned
- 1/2 c. cucumber, diced
- 1/4 c. carrot, grated
- 2 T. cilantro, chopped
- sunflower seeds or pumpkin seeds, for topping, optional

mix all ingredients Here are a few of my favorite combinations: Pumpkin Pie Scrub: 1 cup of brown sugar, 1/2
- Use 2 parts sugar (regular white or brown sugar work great) to 1 part oil (almond, olive and coconut are great), add 1/2 tsp Vitamin E oil (or the gel from a few capsules), add other optional ingredients, and mix well.
