Chickpea & Quinoa Salad

Rinse and drain chickpeas and add to a large bowl
- 1 (15 oz) can chickpeas
- 1 cup cooked quinoa
- 1 large tomato, diced
- 1/2 a cucumber, diced
- 1/2 medium onion, diced
- 1/4 cup vegan mayonnaise
- 2 tablespoons olive oil
- 2 tablespoons mustard
- 1 teaspoon Sriracha sauce (optional)
- Juice of 1 lemon
- 1 - 2 teaspoons dried dill
- Salt & pepper to taste
Buckwheat Quinoa Apple Maple Bake

1. Preheat oven to 350 F. In a bowl, combine quinoa flakes, buckwheat flour, chia seeds, cinnamon and raisins
- 1/2 cup quinoa flakes
- 1/2 cup buckwheat groats, ground into flour in a blender
- 1 tbsp chia seeds
- 1 tsp cinnamon
- 2 tbsp raisins
- 1 tsp vanilla extract or powder
- 2 tbsp applesauce (unsweetened)
- 2 tbsp maple syrup
- 1 1/4 cup almond milk (or milk of choice)
- 1 apple, diced (leave peel on if organic, peel if not)
- 2 tbsp walnuts, chopped
Vegan Bowl

Preheat oven to 400F and line two large baking sheets with parchment paper
- 1 large sweet potato, chopped into 3/4-inch cubes
- 1 (15-ounce) can chickpeas, drained and rinsed (about 1.5 cups)
- 1 cup uncooked quinoa
- 1 large carrot, peeled & julienned
- purple cabbage or vegetable of choice, shredded
- couple handfuls of greens for the base (optional)
- lots of hummus
- sliced avocado
- hulled hemp seeds.

- 4 cups water
- 4-6 cloves garlic, minced
- 1 to 2 teaspoon dried basil
- 1/2 to 2 teaspoon dried oregano
- pinch cayenne pepper
- salt to taste
- freshly ground black pepper
- 1 pinch nutmeg
- 1 1/2 tablespoon nutritional yeast
- 2 large Portabella mushrooms, sliced 1/4-inch thick
- 2 cloves garlic, minced
- 1/8 cup wine (I used white, but red will do)

- 3 Tablespoons apple cider vinegar
- 2 teaspoons soy sauce

- pinch of dried ginger or 1/2 tsp fresh zested ginger root (preferable)

Add lentils into a medium pot along with 2 and 1/4 cups water
- FOR THE LENTIL BALLS:
- 1/2 cup uncooked green lentils
- 1 cup walnuts halves, finely chopped
- 2 teaspoons extra virgin olive oil
- 2 heaping cups finely chopped cremini mushrooms (one 8-oz package)
- 3 large garlic cloves, minced
- 1 cup finely chopped destemmed kale leaves
- 1/3 cup dried cranberries, finely chopped
- 1/2 teaspoon finely chopped fresh rosemary (or 1/4 tsp dried)
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried oregano
- 1 tablespoon sherry vinegar
- 2 tablespoons ground flax + 3 tablespoons water
- 1/2 cup gluten-free rolled oats, ground into a coarse flour
- 1/2-3/4 teaspoon fine grain sea salt, to taste
- Freshly ground black pepper, to taste
- FOR THE CRANBERRY SAUCE:
- 2 cups frozen or fresh cranberries
- 1 ripe pear, peeled and finely chopped
- 1/2 cup pure maple syrup
- small pinch fine grain sea salt
