Grape Jelly

Use baby food jars and give as gifts
- 3 1/4 c sugar
- 1 1/2 c water
- 6 oz frozen grape juice concentrate
- 1/2 bottle Certo
Sourdough Biscuits

- 1 c self rising flour
- 1/4 tsp salt
- 1/4 - 1/3 c oil
Pecan Pie Bars

Enjoy the flavor of pecan pie the easy way
- 1 1/4 c all purpose flour
- 3 tbs brown sugar
- 1/2 c butter, melted (no substitutes)
- 2 eggs
- 1/2 c packed brown sugar
- 3/4 c chopped pecans
- 1/2 c light corn syrup
- 2 tbs butter, melted
- 1 tsp vanilla
White Chicken Lasagna

- For the filling:
- 1# box noodles cooked or 4 frozen pasta sheets
- 1 1/2 # boneless chicken breasts, cooked or plain rotisserie chicken,skinned and deboned - finger shred
- 2 tbs EVOO or bacon drippings
- 1 c green pepper, diced
- 1 c celery, diced 1 c onion, diced
- Cook vegetables about 3 minutes and then add to chicken.
- Set aside.
- For the cheese:
- 1 c cottage cheese
- 1 c ricotta cheese
- 2 eggs
- 1 tbs dried oregano
- 1 tbs dried basil
- 1 tbs dried parsley
- 1 tsp white pepper
- 1 tsp garlic powder
- 1 tsp dried thyme
- 2 c shredded mozzarella or Italian blend.
- 1 c Parmesan cheese, grated
- Mix all except mozzarella and Parmesan. Set aside.
- For the sauce:
- 4 tbs butter,melted
- 4 tbs all purpose flour
- 1 tsp fresh nutmeg, ground
- 1 c Parmesan cheese
- Add flour to melted butter and whisk until smooth. Add cheese and nutmeg, continue to whisk. Do not boil.
- Build in 3 layers. Coat bottom with sauce, add pasta, meat, cheese, sauce and mozzarella repeat. Reserve some sauce to drizzle on top after cooking.
- Bake 1 hour covered. Rest 10-15 minutes before serving. Top with sauce and grated Parmesan cheese.
Easy Beef Lasagna

Makes 2 casseroles. easily frozen
- 3 c ground beef, cooked and drained
- 1 (26oz) jar fire-roasted tomato and garlic pasta sauce(or preferred sauce
- 1 (15 oz) container ricotta cheese
- 1 small cottage cheese
- 2 eggs
- 3/4 c shredded Parmesan cheese
- 1/4 c parsley, fresh and chopped
- 1/4 c basil, fresh and chopped
- salt and pepper
- 12 no cook lasagna noodles
- 3 c shredded mozzarella cheese
Balsamic Roasted Potatoes

- 2 tsp evoo
- 2 tsp garlic, minced
- 1 tsp thyme or rosemary, fresh, chopped
- 1/2 tsp sea salt

- 1 (46oz) can unsweetened pineapple juice, chilled
- 4 (6oz) cans limeade concentrate
- 1/4 c honey
- fifth of gin
- 84 oz(12 bottles 7oz) 7Up, chilled
- Garnish with lime slices

- 2 1/4 c all purpose flour, divided
- 1/2 c powdered sugar
- 1 c cold butter, cut into pieces
- 4 large eggs
- 2 c sugar
- 1 tsp lemon zest
- 1/3 c fresh lemon juice
- 1/2 tsp baking powder
- powdered sugar
Feta and Pea Salad

- 2 cups baby green peas frozen, thawed
- 2 tbs evoo
- 1 tbs red wine vinegar
- 1 tbs honey
- 2 tsp Dijon mustard
- 2 radishes(add more), finely sliced
- 1 small red onion, thinly sliced
- 1/4 c crumbled feta cheese
