Summertime Fruit Trifle

Use large glass salad bowl
- 2 c peaches, fresh or frozen, thawed
- 1/2 c blueberries, fresh or frozen, thawed
- 1/3 c sugar
- 1/4 c all purpose flour 1 1/2 c milk
- 1 beaten egg
- 1 tbs margarine
- 1 tsp orange peel, finely shredded
- 1/2 c orange juice
- 1 (3oz) pkg ladyfingers, split
- 1 tbs cream sherry or orange juice
- 2 c sliced strawberries
- 1 c cool whip, thawed
- top with additional fresh blueberries or strawberries
Red Velvet Cheesecake

Easy and very dramatic for the Christmas holidays
- 1 1/2 c chocolate graham cracker crumbs
- 1/4 c butter,melted
- 1 tbs sugar
- 3 (8oz) pkg cream cheese, softened
- 1 1/2 c sugar
- 4 large eggs, beaten
- 3 tbs unsweetened cocoa
- 1 c sour cream
- 1/2 c whole buttermilk
- 2 tsp vanilla extract
- 1 tsp distilled white vinegar
- 2 (1oz) bottles red food coloring
- 1 (3oz) pkg cream cheese
- 1/4 c butter, softened
- 2 c powdered sugar
- 1 tsp vanilla extract
Congealed Fruit Salad

Dissolve jello in boiling water
- 2 pkg cherry jello
- 2 c boiling water
- 1 large can crushed pineapple
- 1/2 c chopped pecans
- 1 carton cottage cheese, small
- 1/4 c mayonnaise
Salsa Picante

Great with chips, or with quesadillas or a Mexican casserole
- 4 plum tomatoes, diced
- 1 (28oz) can crushed tomatoes, undrained
- 2 (3oz) cans diced green chiles
- 1 bunch green onions, chopped
- 1/2 c chopped fresh cilantro
- 1 tbs chopped fresh oregano
- 1 tbs vinegar
- 2 tsp salt
- 2 tsp pepper
- 1 tsp sugar
- 2 tsp lite soy sauce
- 1 tsp lime juice
Mama's Mini Cinnis

2 (8oz) can refrigerated crescent rolls 6 tbs butter, softened 1/3 c firmly packed brown sugar 1/4 c pecans, cho
- Unroll crescent rolls and separate each dough portion along perforation to form 4 rectangles, press diagonal perforations to seal.
- Stir together butter and next 4 ingredients; spread evenly over 1 side of each rectangle.
- Roll up jelly roll style, starting at long end. Gently cut each log into 6 (1 inch thick)slices. P;ace rolls 1/4 inch apart into 2 (8 inch) greased pie pans.
- Bake at 375* for 15-18 minutes or until golden. Cool 10 minutes.
- Stir together powdered sugar and remaining ingredients and drizzle over buns.
Squash and Mushroom Hominy

If preferred omit bacon and use evoo in place of drippings
- 3 small yellow squash
- 4 thick cut bacon slices, cooked , diced
- 1 c onion, chopped
- 1 tbs evoo
- 2 tbs bacon drippings
- 1 (29oz) can hominy, drained
- 4 c mushrooms, fresh, chopped
- 1 c chicken broth
- 1/2 tsp pepper
- 1 tsp grated lemon rind
- 2 tbs lemon juice
- 1/2 c parsley, fresh, chopped
- salt to taste
Layered Potatoes

Slice potatoes and place in casserole dish alternating bacon and cheese between layers
- 3 # potatoes
- salt and pepper
- 4 oz parmesan cheese, shredded
- 4 oz bacon bits
- 1 stick utter
Chocolate Pound Cake

Can be iced but we like it plain
- 1/2 # butter
- 1/2 c shortening
- 3 c sugar
- 5 eggs
- 3 c all purpose flour
- 1/2 tsp baking powder
- 1/2 tsp salt
- 4 tbs cocoa
- 1 c milk
- 1 tbs vanilla
Praline Cookies

Can add a chocolate topping: Microwave 1 c semi-sweet chocolate morsels until melted, drizzle over top of cooled c
- 1 pkg graham crackers
- 1 stick butter (no substitutes)
- 1 stick margarine
- 1/2 c sugar
- 1 c pecan, chopped
Peanut Butter Fudge

Cook butter, sugar, milk and cocoa for 1 1/2 minutes after it comes to a boil
- 1/2 # butter
- 4 c sugar
- 1/3 c cocoa
- 1/4 tsp salt
- 4 c oatmeal, regular
- 2 c milk
- 1 c peanut butter
- 2 tsp vanilla
