Homemade Shrimp Boil

1. Combine all the spice mix ingredients in a small bowl and mix well
- Spice Mix:
- 2 tablespoons coriander seeds
- 2 tablespoons mustard seeds
- 1 tablespoon red pepper flakes
- 1 tablespoon dill weed
- 1 tablespoon allspice
- 1 tablespoon salt
- 3 bay leaves
- 3 quarts water
- 8 small red skin potatoes
- 3 ears corn, cut in thirds
- 4 smoked sausages, such as kielbasa
- 2 pounds shell-on shrimp
- Juice of 1 lemon
- Cocktail sauce, to serve
- Melted butter, to serve
Honey Garlic Pork Chops

Sift together the flour, salt, black pepper, ground ginger, nutmeg, paprika and cayenne pepper
- For the Honey Garlic Sauce:
- 4 Center loin pork chops, well trimmed
- 1 CUP Flour
- 2 tsp Salt
- 2 tsp Black pepper
- 1 1/2 tbsp Ground ginger
- 1 Tbsp Ground nutmeg
- 1 Tbsp Paprika
- 1/2 tsp Cayenne pepper
- 2 Eggs
- 4 Tbsp water
- 2 Tbsp Olive oil
- 3 – 4 Cloves minced garlic
- 1 CUP Honey
- 1/4 CUP Soy sauce
- 1 tsp Ground black pepper
White Sangria (Growers)

Mix all ingredients together
- 1 - 750 ml bottle Bodacious Smooth White
- 1 - 750 ml bottle Arbor Mist Peach Moscato
- 2 - 330 ml bottles of Growers White Grape ( I use more)

- 2 tbsp (30 mL) vegetable oil, divided
- 1 cup (250 mL) chopped onions
- 1 tsp (5 mL) minced garlic
- 2 ears corn, about 2 cups (500 mL) of kernels, reserving corn cobs
- 2 1/2 cups (625 mL) chicken stock
- 1 tsp (5 mL) finely chopped chipotle in adobo
- Pinch smoked Spanish paprika
- 1 tbsp (15 mL) coriander leaves
- 1/2 tsp (2 mL) lime zest
- GARNISH
- 2 slices smoked bacon, chopped, about 1/3 cup (80 mL)
- 1 cooked red potato diced, about 1/2 cup (125 mL)
- 1/4 cup (60 mL) red bell pepper, diced
- 2 tsp (10 mL) chopped coriander leaves

Nut Butter and Banana Overnight Oats

This recipe is for all those who like peanut butter
- ½ cup of rolled oats
- ½ a cup of almond milk
- 2 tablespoons of nut butter of choice
- ½ a ripe banana
- 1 tablespoon of unsalted nuts of choice
Coconut Lime Rice

In a small sauce pan over medium high heat, saute the rice in the coconut oil for just 1 minute
- 1 teaspoon coconut oil
- 1 cup white jasmine rice*
- 1 13.5 ounce can of light (or low fat) coconut milk
- zest of 1 lime
- juice of half a lime
- salt to taste
Pink Lemonade Margarita

Pour the thawed, lemonade concentrate into a pitcher and fill with the cold water
- 1 - 12oz can of frozen pink lemonade concentrate, thawed
- 3 - 12oz cans of cold water (just use empty lemonade can)
- 1 - 12oz bottle of tequila
- 6 oz of Grand Marnier
- ice cubes or crushed ice
- Salt to rim glasses
