White Birthday Cake

Light and fluffy vegan white cake with a gorgeous white buttercream frosting
- For the Vegan White Cake:
- 2 and 1/2 cups (312g) + 2 Tbsp All Purpose Flour*
- 1 and 1/2 cups (300g) White Sugar
- 1 and 1/2 tsp Baking Soda
- 3/4 tsp Salt
- 1 and 1/2 cups (360ml) Almond Milk*
- 1/2 cup (120ml) Coconut Oil (Melted)*
- 1 Tbsp White Vinegar
- 2 tsp Clear Vanilla Extract
- For the Buttercream Frosting:
- 4 and 1/2 cups (540g) Powdered Sugar
- 1/2 cup (112g) Vegan Butter
- 3 and 1/2 Tbsp Almond Milk
- 2 tsp Clear Vanilla Extract
- For Decoration:
- Vegan Sprinkles
Jack'O Lantern Chips & Dip

In a pot over medium heat, melt 1 Tbsp
- Guacamole:
- 3 avocados, halved and pitted
- Juice of 1 lime
- 2 Roma tomatoes, diced
- 1/4 cup red onion, chopped
- 1/4 cup cilantro, chopped
- 1 garlic clove, minced
- 1 tsp salt
- 1/4 tsp chili powder
- Mash avocados with the lime juice. Add the rest of the ingredients and mix thoroughly.
- Queso:
- 1 Tbsp. butter
- 1 scallion clove, chopped
- 2 cups cheddar cheese
- 2 cups Monterey Jack cheese
- 1/2 cup milk
- 1 Tbsp. corn starch
- 4 oz canned mild green chiles, with juice
Enchilada Sauce

In a medium saucepan, spray oil and sauté garlic
- 2 garlic cloves, minced
- 1-2 tbsp chipotle chilis in adobo sauce
- 1-1/2 cups tomato sauce
- 1/2 tsp chipotle chili powder
- 1/2 tsp ground cumin
- 3/4 cup fat free chicken broth
- kosher salt and fresh pepper to taste
Chocolate Banana Buttermilk Cake

Naturally low in fat, buttermilk gives this cake a moist and tender crumb
- 2 cups mashed ripe bananas (about 3 large)
- 2 tsp lemon juice
- 2 1/2 cups flour
- 1/2 cup cocoa
- 1 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup vegetable oil
- 2 cup slightly packed brown sugar
- 3 eggs
- 1 tbsp vanilla Extract
- 1 1/2 cups buttermilk
- 1/2 cup Semi-Sweet Chocolate Chips
- GLAZE
- 1/4 cup Semi-Sweet Chocolate Chips
- 3 tbsp milk

- 1 package lemon pie filling, prepared

Roasted Sweet Potato Quinoa Salad

Fresh and healthy roasted sweet potato quinoa salad made with spinach and avocados
- 2 medium sweet potatoes
- 1 and 1/2 tablespoons olive oil
- Coarse sea salt and freshly cracked black pepper, to taste
- 1 cup quinoa
- 2 cups water (or chicken or vegetable broth/stock)
- 4-5 ounces fresh spinach, stems removed and coarsely chopped
- 1 large avocado, chopped
- 1/3 cup dried cranberries
- Optional: fresh basil, to taste
- Lemon Vinaigrette
- 4 tablespoons red wine vinegar
- 1 and 1/2 tablespoons dijon mustard, do not use regular mustard
- 1/2 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 clove garlic, minced
- 1/2 cup olive oil
- 1 large lemon (3 tablespoons juice)

- 1 c. semisweet chocolate chips, melted
- Chocolate shavings, for garnish

- 1 c. butter, softened
- 2 1/2 c. powdered sugar
- 3/4 c. cocoa powder
- 2 tsp. pure vanilla extract
