Sweet potato waffles with nut topping
By granolagina
Combine waffle ingredients and prepare in waffle iron
- topping:
- 2 c. bisquick
- 2 T. brown sugar
- 1/2 t. cinnamon
- 1/4 t. ginger
- 1/4 t. nutmeg
- 1 egg
- 1 1/3 c. milk
- 1 cup canned sweet potatoes, mashed
- 2 T. canola oil
- 1 t. vanilla
- 1 T. butter
- 1/2 c. chopped pecans
- 1/2 c. chopped walnuts
- 2 T. brown sugar
- 1 T. water
- 1/8 t. cinnamon
- dash salt
- dash nutmeg
Raspberry Yogurt Popsicles

Combine all ingredients in the jar of a blender, and process until smooth
- 2 cups plain whole-milk yogurt
- 2 cups fresh or frozen raspberries
- ¾ cup sugar
- 1 tsp. lemon juice
tilapia citrus couscous salad

Cook couscous as directed and set aside to keep warm
- 1 cup dry whole grain couscous
- Olive Oil cooking spray
- 1/2 lb tilapia fillets skin and bones removed
- 2 large carrots, peeled and diced
- 1 stalk celery, ends trimmed and finely diced
- I medium yellow onion, finely diced
- 1/2 red bell pepper, cored, seeded and diced
- zest and juice 1 lime
- zest and juice 1/2 lemon
- 1 tsp Dijon mustard
- 1 tbsp evoo
- 1 clove garlic, minced
- 2 tsp dried parsley
- sea salt and fresh ground pepper to taste
dirty rice with turkey sausage

1. Cook brown rice according to package directions
- 1 c. brown rice
- 7 oz. deli-frsh smoked lean turkey sausage
- cooking spray
- 1 medium yellow onion, diced
- 1 green bell pepper, cored, seeded, and diced
- 3 cloves garlic, minced
- 1 can red beans, rinsed and drained
- 1 bay leaf
- 2 Roma tomatoes, cored, seeded, and finely chopped
- 1.5 t. Cajun seasoning
- salt and pepper
- 4 T. fresh cilantro, minced
broccoli mini quiches

1. Preheat oven to 350. Spray 10 cups of a muffin tray lightly with cooking spray
- cooking spray
- 1 tsp olive oil
- 1.5 c chopped broccoli
- 2/3 c shredded low fat cheddar cheese, divided
- 1 c low fat greek style yogurt
- 2 Tbsp low fat milk
- 1 whole egg
- 1 tsp dried oregano
- 1/4 tsp sea salt
- ground pepper to taste
Goat cheese asparagus quiche

1. Coat 4 ramekins or a 9-inch square baking pan with cooking spray
- 1 lb. asparagus, trimmed and cut into 1-inch lengths (reserve tips for a garnish)
- 1 tsp olive oil
- 2 large shallots
- 2 cloves garlic, peeled
- 5 oz goat cheese
- 2 large eggs
- 5 large egg whites
sweet potato cups

Heat oven to 400˚F. Place sweet potatoes on a baking sheet and bake at 400˚F for 1 hour or until fork tender
- 2 large sweet potatoes, scrubbed and pricked several times with a fork
- 4 ounces cream cheese, at room temperature
- 2 tablespoons pure maple syrup
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- A handful of edible decorations – dried cranberries, dried bing cherries, pecans, etc
Vegetable Pie

Preheat oven to 350 degrees
- 2 tbsp butter
- 2 c slices mushrooms
- 2 c chopped zucchini
- 1 c chopped yellow onion
- 1/2 c chopped green bell pepper or carrots
- 1 clove minced garlic
- 2 tbsp chopped fresh parsley
- 4 large eggs
- 2 c cottage cheese
- 2 c grated Monterey Jack cheese
- 12 oz chopped fresh spinach or 10 oz chopped frozen squeezed dry
- 1/4 tsp dried dill
- 1/2 tsp salt
- freshly ground pepper to taste
- freshly grated Parmesan cheese for topping
Jamaican-style Black Bean and Coconut Cornbread Bake

Directions 1. Preheat oven to 350°F
- 2 Tbs. olive oil, plus more for greasing pan
- 2 15-oz. cans black beans,rinsed and drained
- 1 14.5-oz. can diced tomatoes with mild green chiles, juices included
- 1 1/2 cups frozen yellow corn, thawed
- 1/2 tsp. jerk seasoning, or more to taste
- 1/2 tsp. salt, divided
- 1/8 tsp. ground black pepper
- 1/2 cup all-purpose flour
- 1/2 cup yellow cornmeal
- 1 Tbs. sugar
- 1 1/4 tsp. baking powder
- 2/3 cup light coconut milk
herb vinaigrette

- 9 tablespoons white wine vinegar
- 1 1/2 tablespoons wildflower honey
- 1/2 teaspoon fine sea salt
- 1 cup canola oil
- 3 tablespoons chopped fresh basil
- 3 tablespoons minced fresh chives
