Broiled Chicken With Mustard Tomato Sauce

Heat broiler or grill. Spray rack
- Nonfat cooking spray, as needed
- 1 chicken - (3 lbs), cut in pieces, and skin removed
- 1 Tbs butter
- 1 onion, chopped
- 2 Tbs flour
- 1 1/2 cups low-sodium chicken broth, boiling
- 2 Tbs tomato paste
- 2 tsp Worcestershire sauce
- 1 tsp sugar
- 1 tsp dry mustard
Quick 40-Clove Chicken

Preheat oven to 400°F. Season chicken all over with salt and pepper
- 6 (4-6 oz.) fresh boneless, skinless chicken breasts
- 1 tsp coarse salt

Bulgur Wheat Salad With Smoked Turkey

Pour boiling broth over the bulgur wheat into a heatproof bowl and let stand for 1 hour
- 2 cups low-fat low-sodium chicken broth, boiling
- 1 cup dry bulgur wheat
- 2 green onions, minced
- 2 medium carrots, peeled, sliced
- 1/2 cup diced cucumber
- 2 Tbs minced parsley
- 1 1/2 lbs smoked turkey breasts, cubed (or use cubed cooked fresh turkey)
- 1/2 cup rice vinegar
- 1 Tbs lite soy sauce
- 1 tsp sugar
- 1 Tbs dry sherry
- 2 garlic cloves, minced
