Corn and Avocado Soup with Pickled Cucumbers Recipe

Serves 4 Directions To make pickled cucumbers: In a medium bowl, mix together all ingredients
- Pickled cucumbers:
- 1/2 english cucumber, sliced into thin half moon (about 1 cup)
- 1/2 cup corn kernels, (from 1 small ear corn )
- 3 tbsp white wine vinegar
- 1/4 tsp kosher salt
- Soup:
- 2 tbsp unsalted butter
- 1 medium bulb fennel, cored and chopped (about 1 1/2 cups,) plus chopped fronds for garnish.
- 1 medium white onion, chopped (about 1 1/2 cups)
- 3 garlic cloves, chopped
- 2 cups corn kernels, from 3 to 4 ears of corn.
- 1 1/2 tsp chopped thyme leaves
- 1 1/2 tsp kosher salt, more to taste
- 4 cups low-sodium chicken stock
- 1 large avocado, peeled and pitted
- 1/4 cup plain whole milk Greek yogurt
- Pepper to taste
Apple and Oka puff pastry

Preheat oven to 200°C (400°F)
- 2 Paula Red apples, finely sliced
- 1 lemon, juiced
- 1/2 of a 397-g package of frozen puff pastry, thawed
- 1 egg yolk
- 1 shallot, finely chopped
- 30 mL (2 tbsp.) minced fresh tarragon
- To taste, pepper
- 1 (225 g) Oka cheese, thinly sliced

- Vanilla Bean Pudding:
- 3/4 cup milk
- 1 cup cream
- 1 vanilla bean
- 3 egg yolks
- 2 tbsp cornstarch
- 1/2 cup sugar
- 1/4 tsp salt
- 1/2 tsp vanilla extract
- 1 1/2 tsp butter
- 1/4 cup whipped cream (optional)
- PIE:
- 1/2 cup butter (1 stick), softened
- 1 cup sugar
- 2 large eggs, plus 2 yolks
- 1 tsp vanilla extract
- 1 1/4 cups cake flour
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup milk
- 1 recipe Vanilla Bean Pudding
Chicken and Basil Stir-Fry

made this for family dinner, very good
- 1 1/2 pounds boneless, skinless chicken breast halves, cut crosswise into 1/4-inch-thick slices (longer pieces cut crosswise in half again)
- 1 tablespoon cornstarch
- Coarse salt and ground pepper
- 6 teaspoons vegetable oil
- 1 small onion, halved and cut into 1/4-inch-thick wedges
- 2 bell peppers (red, yellow, green, or a mix, ribs and seeds removed), cut into 1/4-inch-wide strips
- 6 garlic cloves, minced
- 2 tablespoons rice vinegar
- 2 tablespoons soy sauce
- 1 1/2 cups fresh basil leaves, larger leaves torn in half
- Cooked white rice, for serving (optional)

Heat oil in a medium frying pan over medium heat
- 1 tablespoon vegetable oil
- 1/2 yellow onions, finely chopped
- 1 tablespoon tomato paste
- 2 tablespoons harissa paste or 1 tablespoons smoked paprika
- 3 medium garlic cloves, minced
- 4 medium jarred roasted bell peppers, small dice (about 1 cup)
- 1 (28 ounce) can crushed tomatoes with juices

- 8 ounces skinless, boneless rotisserie chicken breast, shredded (about 2 cups)
- 1 garlic clove, finely chopped
- 1/8 teaspoon kosher salt
- 3 tablespoons extra-virgin olive oil
- 1/2 teaspoon grated lemon rind
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon granulated sugar
- 1/2 teaspoon freshly ground black pepper

- 1 plum tomato, chopped and seeded

- For the seasoning:
- 185 grams (1 cup) uncooked brown rice
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon salt
- 1/2 teaspoon coriander
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
