  • Pickled cucumbers:

  • 1/2 cup corn kernels, (from 1 small ear corn )
  • 3 tbsp white wine vinegar
  • 1/4 tsp kosher salt
  • Soup:
  • 2 tbsp unsalted butter
  • 1 medium bulb fennel, cored and chopped (about 1 1/2 cups,) plus chopped fronds for garnish.
  • 1 medium white onion, chopped (about 1 1/2 cups)
  • 3 garlic cloves, chopped
  • 2 cups corn kernels, from 3 to 4 ears of corn.
  • 1 1/2 tsp chopped thyme leaves
  • 1 1/2 tsp kosher salt, more to taste
  • 4 cups low-sodium chicken stock
  • 1 large avocado, peeled and pitted
  • 1/4 cup plain whole milk Greek yogurt
  • Pepper to taste
