Fettuccine with Gorgonzola and Broccoli

In a medium stainless steel pot, combine the broth and wine and bring to a boil over moderaate heat
- 3/4 cups canned low sodium Chicken Broth or homemade stock
- 1/2 cup Dry White Wine
- 1/2 lb Gorgonzola or other blue cheese, crumbled
- 2 cups Heavy Cream
- 3 tbsps Butter
- 1 tsp Salt
- 1/4 tsp fresh-ground Black Pepper
- 1 lb Fettuccine
- 1 1/4 lb Broccoli, thick stems removed, tops cut into small Florets
- 1/3 cups Grated Parmesan Cheese, plus more for serving
- 3 tbsps chopped fresh Parsley
Hard Strawberry Lemonade

Place all ingredients in a blender with on cup of ice
- 2 ounce Lemonade Concentrate
- 1 ounce La Paz strawberry margarita mix
- 1 ounce Sweet and Sour Bar Mix
- 2 ounce Malibu Coconut Rum
- 2 ounce Vodka
Ginger Mojito

In atall glass, muddle mint leaves, lime juice and ginger
- 2 ounces Montecristo rum spiced blend
- 1 1/2 ounce fresh lime juice
- 1/2 ounce ginger ale
- 6 mint leaves
- 3 slivers fresh ginger
Strawberry Smoothie

- 3/4 bag frozen unsweetened whole Strawberries
- 4 cups Dole Pineapple juice
- 1 cup Orange juice
- 1 1 /2 cups lowfat Vanilla Yogurt, frozen
Kathy's Sweet and Sour Chicken

Place all ingredients in slow cooker or crockpot with chicken on top
- 6 medium carrots, cut into 1/2 inch chunks or strips.
- 1/2 cup finely chopped green bell pepper
- 1/4 cup finely chopped onion
- 6 chicken breast halves, with or without skin
- 1/2 teaspoon salt
- 1 (10 ounce) jar sweet and soour sauce
- 1 (15 ounce) can pineapple chunks, drained
- 2 tablespoon cornstarch

- 1 1/3 cups flaked coconut
- 1 cup chopped pecans
- 5 egg whites
- 8 ounces creams cheese
- 1/2 cup margarine, softened
- 4 cups confectioners' sugar
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans.
Sweet Potato Layer Cake

In a mixing bowl, beat oil and sugar
- 1 1/2 cups Vegetable Oil
- 2 cups Sugar
- 4 Eggs, separated
- 1 1/2 cups finely shredded uncooked Sweet Potato
- 1/4 cup Hot Water
- 1 tsp Vanilla Extract
- 2 1/2 cups Cake Flour
- 3 tsp Baking Powder
- 1 tsp Ground Cinnamon
- 1 tsp Ground Nutmeg
- 1/4 tsp Salt
- 1 cup chopped Pecans
- 1/2 cup Butter or Margarine
- 1 1/3 cups Sugar
- 2 (5 ounce) can Evaporated Milk
- 4 Egg Yolks, beaten
- 2 2/3 cups Flaked Coconut
- 1 cup chopped Pecans
- 2 tsp Vanilla Extract
Mai Tai

Shake all ingredients in a shaker with ice and strain into glass over crushed ice
- 1 ounce Montecristo Rum Spiced blend
- 1 ounce Montecrisot Rum Premium blend
- 1 ounce Triple Sec
- 1/2 ounce fresh squeezed Lime Juice
- 1/2 ounce Orgeat Syrup
