Lemony Brown Rice with Zucchini and Carrots

I whipped this up after work one night recently in an effort to put the lingering veggies in our fridge to good use...
- 2 cups brown rice blend (I love this one from Lundberg Jubilee Rice because it's so wonderfully nutty and flavorful though plain brown would be just fine)
- 3-4 medium carrots, grated
- 1-2 small squash, grated (I used pattypan since it's what we had, but zucchini or yellow squash would work)
- 3 garlic cloves, minced
- 1 tbsp olive oil
- 1 tbsp butter
- salt
- pepper
- 1 lemon, juiced
Sherried Shrimp with Romesco Sauce

A splash of sherry and a little heat from chili peppers enliven delicate shrimp
- Romesco Sauce
- 2 Tbsp (30 mL) each toasted almonds and pine nuts, or 1/4 cup (60 mL) toasted almonds
- 1 clove garlic, minced
- 1 small slice bread (no crust), torn
- 1 roasted red pepper, chopped
- 1 Tbsp (15 mL) extra-virgin olive oil
- 1 Tbsp (15 mL) sherry or red wine vinegar
- Sea salt to taste
- Shrimp
- 1 tsp (5 mL) extra-virgin olive oil
- 1/2 lb (225 g) raw shrimp, peeled and deveined
- 1 clove garlic, minced
- 1/4 tsp (1 mL) hot chili flakes or 1 tsp (5 mL) serrano chili, seeded and finely chopped
- 1/4 cup (60 mL) dry sherry or orange juice
- 2 cups (500 mL) torn kale or baby spinach
Pistachio Fudge

This recipe can actually be switched up to become almost any flavor you would like
- 1/3 cup plus 1 Tablespoon evaporated milk
- 1/4 cup butter (half a stick)
- 1 1/4 cups sugar
- 1/2 cup pistachios, shelled and chopped
- 1/2 teaspoon vanilla flavoring
- 4 ounces white chocolate chips
- 1 cup marshmallow creme
- 1-3 drops green food coloring
- 1 pinch salt
Classic Sherpa Momo Dumplings

For stuffing mixture combine all filling ingredients in a large mixing bowl
- Dough for wrappers:
- 5 cups all-purpose flour
- 1 tablespoon oil
- Water as required
- Pinch of salt
- Filling:
- 2 lbs. ground pork
- 1 cup red onion, finely chopped
- 1 tablespoon fresh garlic, minced
- 1 tablespoon fresh ginger, minced
- 1/4 teaspoon timur (Szechwan pepper)
- 2 tablespoons soy sauce
- 1/4 teaspoon turmeric powder
- 1 teaspoon sesame oil
- 1 teaspoon hot chili powder
- 3 tablespoons cooking oil
- Salt and Pepper

- 2 Tbsp (30 mL) grapeseed oil
- 1 clove garlic, minced
- 2 tsp (10 mL) fresh ginger, minced
- 2 green onions, sliced in thin rounds
- 1 cup (250 mL) shiitake mushrooms, sliced
- 1 medium carrot, peeled, thinly sliced julienne style
- 1 sweet red pepper, thinly sliced in strips
- 1 tsp (10 mL) sesame oil
