Grilled Shrimp Skewers with Soy Sauce, Fresh Ginger and Toasted Sesame Seeds

Soak 4-inch wooden skewers in cold water for 1 hour
- Wooden skewers (4-inch)
- 24 large shrimp
- 1/2 cup light soy sauce
- 2 cloves garlic, finely chopped
- 1 tablespoon grated fresh ginger
- 1 tablespoon toasted sesame oil
- 2 tablespoons white wine vinegar
- 1 tablespoon fresh lime juice
- 1/4 cup peanut oil, plus extra for drizzling
- Salt and pepper
- 2 tablespoons toasted sesame seeds
Chocolate Cake..The Best Ever

Mix baking soda in buttermilk, set aside
- CAKE:
- Preheat oven to 400 degrees
- 2 c flour
- 2 c sugar
- 2 sticks butter
- 4 TBS coco
- 1 c water
- 2 eggs (slightly beaten)
- 1/2 c buttermilk
- 1 tsp baking soda
- 1 tsp vanilla
- ICING:
- 1 stick butter
- 4 TBS coco
- 6 TBS Milk
- 1 box powdered sugar
- 1 tsp vanilla
Jalapeno Steak 'n' Mushrooms

Directions 1. Trim fat from meat
- 2 1/2 pounds boneless beef chuck steak, cut 1 inch thick
- 1/4 cup packed brown sugar
- 1/4 cup reduced-sodium soy sauce
- 1/4 cup Worcestershire sauce
- 2 fresh jalapeno peppers, thinly sliced*
- 2 tablespoons red wine vinegar
- 1 tablespoon quick-cooking tapioca, crushed
- 4 garlic, thinly sliced
- 1 cup snipped fresh cilantro
- 2 3 1/2 - 4 inches diameter portobello mushrooms, stemmed, gills removed from caps, and caps cut into 1/2-inch-thick slices
- 1 medium onion, thinly sliced
- Fresh cilantro, chopped (optional)
- Hot cooked polenta, mashed potatoes, or mashed sweet potatoes (optional)
Sweet and Spicy Chicken

In a small bowl, combine all the spices
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1 tablespoon white sugar
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried parsley
- 2 boneless, skinless chicken breasts
- 2 tablespoons butter
- 1 tablespoon olive oil
- juice of 1/2 lemon
Pork and Noodle Salad

Sprinkle pork with salt & pepper
- GINGER SOY DRESSING:
- Ginger Soy Dressing
- 1/4-1 lb pork tenderloin
- 3.75 oz bean threads or cellphane noodles
- 2 cups shredded napa cabbage
- 2 med carrots shredded
- 1 cu thinly sliced radishes
- 2 cups torn boy choy or baby bok choy
- 1/2 Cilantro leaves
- 1 recipe wonton crisps
- combine 1/3 cup veg oil, 3 tbs lime juice, 3 tbs rice vinegar, 1tbs brown sugar, 1 tbp grated fresh ginger, 1tbs soy sauce, 1 tbs honey, t tsp toasted sesame oil, 1/4 tsp salt 1/4 tsp crushed red pepper. Cover, mix well. Refrigerate up to 3 days.
Basil Pesto with Lemon

Pesto with Lemon and walnuts
- 2 cups fresh basil leaves (packed into measuring cup)
- 3-4 cloves fresh garlic, peeled and sliced
- 1/2 cup extra-virgin olive oil (choose a a flavorful olive oil for pesto)
- 1/2 cup walnuts
- 3/4 cup coarsely grated Parmesan cheese
- 1/4 cup fresh squeezed lemon juice
Lemon Butter Flank Steak

1. Place steak in a shallow dish
- 1-1/2 lb. beef flank steak
- 142 cup chopped fresh cilantro
- 4 Tbsp. olive oil
- 4 tsp. finely shredded lemon peel
- 2 Tbsp. lemon juice
- 2 cloves garlic, minced
- 1/4 tsp. crushed red pepper
- 1 recipe Lemon Butter (below)
- 4 cups shredded Napa cabbage
- 1 cup fresh bean sprouts
- 2 green onions, bias-sliced into 1-inch pieces

- 1 1/4 C boiling water
- 1 20 oz crushed pineapple with juice
- 1 can whole cranberry sauce
- 2/3 C port wine
- 1 cup choppped pecans
- 1 cup sour cream
- 1 8oz pk cream cheese
Mac 'N Cheese with Bacon and Cheese

Bring a pot of salted water to a boil over high heat
- Kosher salt
- 1 pound elbow macaroni
- 4 cups milk
- 2 or 3 sprigs thyme
- 4 cloves garlic, smashed and divided
- 3 tablespoons unsalted butter

- 5 1/2 cups shredded sharp white Cheddar
