Butternut Squash with Brown Butter

Directions Heat butter in a large skillet over medium-high heat until golden brown
- 2 tablespoons unsalted butter
- 1 butternut squash (about 1 3/4 pounds), peeled, seeded, and cut into 3/4-inch cubes
- 1/2 cup low-sodium canned chicken broth
- 1/4 cup water
- 1 tablespoon dark-brown sugar

- 1 (15 ounce) can pumpkin puree
- 4 eggs
- 1 cup vegetable oil
- 2/3 cup water
- 3 cups white sugar
- 3 1/2 cups all-purpose flour
- 2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- 1/4 teaspoon ground ginger

Pecan Pie Cookie Bars

- Crust:
- 1/4 c butter
- 1/4 c shortening
- 1/2 c brown sugar
- 1 c flour
- Mix and press in 9x13 greased pan and bake at 350 for 10 minutes.
- Topping:
- 2 eggs
- 1 c brown sugar
- 1/2 t baking powder
- 1/2 t salt
- 1/2 t banilla
- 1 c chopped pecans
- Bake for 25 minutes. Cool and cut into small bars!
Caramelized Pork Bánh Mì

The caramelized pork could be a recipe all its own, but we sure do like it in this sandwich, as well
- Caramelized Pork and Bánh mì Assembly:
- 1-1.5 pound pork tenderloin
- 3 tablespoons Fish sauce
- 2 tablespoons Maple Syrup
- 1 tablespoon brown sugar
- 2 tablespoons soy sauce
- 1/2 teaspoon sesame oil
- 2 garlic cloves, minced
- 1 slice ginger, minced
- 1 green onion, sliced thinly
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 loaf sweet French baguette (thin) or french bread sandwich rolls. Try to get the kind of French bread with a crisp crust and tender light center.
- red leaf lettuce
- pickled carrot and radishes (see below)
- sliced jalapeno chili peppers
- cilantro
- Pâté (optional, but recommended)
- mayonnaise

- 1/2 cup (1 stick) butter
- 1 cup packed brown sugar
- 12 canned pineapple rings in juice*
- 2 cups all-purpose flour
- 2 tsp. baking powder
- 1/2 tsp. salt
- 1/2 tsp. ground nutmeg
- 1/2 cup (1 stick) butter, softened
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar

- 1 tsp. vanilla
- Vanilla Greek yogurt or sweetened whipped cream (optional)

- 1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan
- 1 1/2 cups all-purpose flour, (spooned and leveled), plus more for pan
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup sugar
- 2 large eggs plus 2 large egg yolks
- 1/2 teaspoon pure vanilla extract
- 1/2 cup whole milk
- 1 pound strawberries, hulled and thinly sliced
- 1 teaspoon unflavored gelatin (from a 1/4-ounce envelope)
- 1 1/2 cups heavy cream
Egg Pasta Frittata

Preheat oven to 425 degrees F
- 1 12 ounce box egg fettuccini pasta
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons butter
- 1 cup heavy cream
- 1 cup grated Parmigiano-Reggiano
- 1/4 to 1/2 teaspoon grated or ground nutmeg, eyeball it
- Salt and black pepper
- 1/4 cup chopped flat-leaf parsley
- 12 extra large eggs, beaten

- Heat oven to 350 degrees
- 3/4 cup Shortening
- 1 tsp ground cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp ground nutmeg
- 3/4 tsp salt
- 1 1/2 cup packed brown sugar
- 2 eggs
- 1 tbs milk
- 2 1/2 cup all purpose flour
- 1/2 baking soda
- 1 c raisins
- 1 cup chopped pecans
- 1 cup craisins (optional)

- 1 TBS good olive oil
- 3 slices thick-cut bacon, cut in 1 inch pieces
- 1 cup (1 inch diced) unpeeled Yukon Gold potatoes
- Kosher salt and freshly ground pepper
- 5 extra large eggs
- 3 TBS milk
- 1 TBS unsalted butter
- 1 TBS fresh chopped chives
