Raisin Bran Muffins

I have had many requests for this recipe
- 1 15 oz box Raisin Bran
- 1 cup melted shortening
- 3 cups sugar
- 4 eggs, beaten
- 1 quart buttermilk
- 5 cups flour
- 2 t baking soda
- 2 t salt
Vanilla Ice Cream

In ice cream freezer container, combine all ingredients; mix well
- 4 cups (2 pints) half and half or light cream
- 1 (14 ounce) can Eagle Brand Sweetened Condensed Milk (NOT evaporated milk)
- 2 Tablespoons vanilla extract
Monster Cookies

This recipe makes a large batch of cookies
- 12 eggs
- 48 oz peanut butter
- 4 cups sugar
- 12 oz chocolate chips
- 8 t baking soda
- 1 T karo syrup
- 2 lb brown sugar
- 1 lb M & M's
- 18 cups oatmeal
- 1 T vanilla
- 1 lb nuts
- Note: I add whatever I have handy and actually like butterscotch chips in mine. So I use about half bag of chocolate and half bag of butterscotch.
Grandmother Oliver's Buttermilk Pancakes

I have made this recipe for about 30 years but generally use in the waffle maker
- 1 egg
- 1 1/8 c buttermilk
- 1/2 t baking soda
- 3 T oil
- 1 1/2 c flour
- 2 1/2 t baking powder
- 3 T sugar
- 3/4 t salt
Ro-tel Chicken

- 1 can cream of chicken soup
- 1 can Rotel tomatoes
- 7 oz spaghetti or rotini noodles
- 3 chicken breasts
- 8 oz Velveta cheese
Scalloped Potatoes and Ham

1. Layer potatoes and ham in a slow cooker sprayed with nonstick spray
- 6 russet potatoes scrubbed clean and sliced in 1/4" rounds
- 1 cream of mushroom condensed soup
- 1 soup can water
- 1 ham steak, about 1 1/2 pounds, cubed
- 4 ounces shredded Cheddar cheese
- grill seasoning to taste
Broccoli, Red Pepper, and Cheddar Chowder

Discard tough lower third of broccoli stem
- 1 small head Broccoli (1/2 lb)
- 1 large boiling Potato (1/2 lb)
- 1 large Onion, chopped
- 1 red Bell Pepper, cut into 1/2-inch pieces
- 1 large Garlic clove, finely chopped
- 2 tbl unsalted Butter
- 1 tsp ground Cumin
- 1 tsp Salt
- 1/4 tsp black Pepper
- 1/2 tsp dry Mustard
- 2 tbl all-purpose Flour
- 3/4 cup Heavy Cream
- 6 oz Sharp Cheddar, coarsely grated (1 1/2 cups)
