Mix well. Shape into logs
- 1 3/4 lb. venison, ground
- 1 3/4 lb. pork, ground
- 6 t. Tenderquick
- 1 1/2 t. ground black pepper
- 2 1/4 t. salt
- 1 1/2 t. cayenne
- 4 1/4 t. light brown sugar
- 1 1/2 t. Louisiana hot sauce, or more per taste
- 1 1/2 t. paprika
- 2 1/4 t. Worcestershire sauce
- 2-3 cloves garlic, finely minced, to taste
- 2 green onions, chopped finely

- 1-1/2-2 2 fully ripe red sweet cherries you'll need 2 cups pitted and chopped cherries
- 2 tablespoons fresh lemon juice

Chilled Lobster Salad with Sweet Summer Corn and Tomatoes

Cook corn in boiling water for about 4-5 minutes; set aside to cool
- 2 medium ears of corn
- 12 oz cooked, chilled lobster meat (yield from 2 – 1-1/2 lb lobsters)
- 1 cup grape tomatoes, sliced in half
- 1 tbsp chopped chives
- juice of 1 large lemon
- 4 tsp olive oil
- salt and fresh cracked pepper to taste
- 8 Boston lettuce leaves, rinsed and dried
BAILEY'S IRISH CREAM CHEESECAKE

Using an electric mixer, beat cream cheese and sugar in large bowl until smooth
- CRUST:
- 10 10 10 whole graham crackers, broken into pieces
- 1 1/4 1 1/4 5 c. pecans, about 5 oz.
- 1/4 1/4 1/4 c. sugar
- 6 6 6 tbsp. (3/4 stick) unsalted butter, melted
- FILLING:
- 1 1/2 1 1/2 1/2 lbs. cream cheese, room temperature
- 3/4 3/4 3/4 c. sugar
- 3 3 3 lg. eggs
- 1/3 1/3 1/3 c. Bailey's Irish Cream liqueur
- 1 1 1 tsp. vanilla
- 3 3 3 oz. white chocolate morsels (Nestle's)
- TOPPING:
- 1 1/2 1 1/2 1/2 c. sour cream
- 1/4 1/4 1/4 c. powdered sugar
- 1 1/2 1 1/2 1/2 oz. white chocolate, chopped or grated
- 24 24 24 pecan halves
- 6 sour cream and sugar in small bowl. Spread onto cooled cake. Refrigerate until well chilled, about 6 hours. Garnish with grated chocolate and place pecan halves around edge.
Sous Vide Maine-Style Lobster Rolls (With Mayonnaise)

1. Heat butter in a large skillet or on a griddle over medium heat until foaming subsides
- 2 tablespoons (30g) unsalted butter
- 4 hot dog buns, preferably top-split (see note)
- 1 recipe Sous Vide Lobster, fully cooled
- Up to 2 tablespoons (30ml) mayonnaise
- 1 rib celery, finely diced
- 1 tablespoon (7g) minced fresh chives and/or tarragon
- Fresh juice of 1 lemon, to taste
- Kosher salt and freshly ground black pepper, to taste (optional)
