Chicken Parmigiana Italia {Electric Digital Pressure Cooker Recipe}

Chop up all the mushrooms and onion into small pieces
- – 1 Small-Medium Yellow Onion (Chopped)
- – 1-2 Cups of Mushrooms (Chopped)
- – 1/4 Cup of Red Wine (I used Marsala wine cause that’s all I had)
- – 1/2 Cup of Chicken Stock (Not pictured)
- – 1 Tbsp of Crushed Garlic
- – 3 Cups of Marinara or Spaghetti Sauce (I used spaghetti sauce cause I like to cheat)
- – 1 Cup of Shredded Parmesan Cheese (Not pictured)
- – 4-6 Chicken Breasts
- – 1/4 Cup White Flour
- – 1/4 Tsp Dried Rosemary
- – 1/4 Tsp Dried Basil
- – 1/4 Tsp Garlic Powder
- – Salt & Pepper to taste
Chicken Booyah

During cooking, it will be necessary to add water to keep meats and vegetables covered
- 1 1 4 to 6 cut up or 4 to 6 bone-in chicken breasts
- 3 3 3 tablespoons chicken soup base
- 10 to 12 10 to 12 12 cups cold water
- 4 4 4 cups carrots, diced
- 4 4 4 cups onions, diced
- 4 4 4 cups celery, diced
- 4 to 6 4 to 6 6 cups potatoes, peeled and diced (optional)
- 4 4 4 cups cabbage, shredded
- 2 2 2 bags (16 ounces each) frozen mixed vegetables (corn, green beans, carrots, peas)
- 1 1 1 can (28 ounces) diced tomatoes
- 1 1 1 tablespoon Lawry’s Seasoning Salt
- 1 1 1 large (46 ounces) V-8 or regular tomato juice
- 4 to 8 4 to 8 8 cups extra chicken stock (optional)
- Juice from half a lemon
- A few dashes soy sauce or salt and pepper (optional)
Pressure Cooker Stuffed Cabbage Rolls

Cook the rice according to the package directions
- Sauce:
- 1 cup brown or long grain white rice
- 1 large head cabbage
- 1 large egg
- 1 cup chopped onion
- 4 cloves garlic, finely minced then "pasted"
- 1 1/2 teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1 1/2 lb. lean ground beef
- 3/4 lb. ground pork*
- You can substitute all ground beef for the pork if you prefer
- 2 tablespoon butter
- 1 cup finely chopped onion
- 3 cloves garlic, minced, then "pasted"
- 2 (14 1/2 oz. each) cans diced tomatoes with their juice
- 1 (8 oz.) can tomato sauce
- 1/4 cup white vinegar
- 2 teaspoon low sodium instant beef bouillon
- 1/2 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon Worcestershire black pepper or freshly ground black pepper
- 3-4 dashes Worcestershire sauce
- 1 tablespoon cornstarch
- 2 tablespoon cold water
- Chopped fresh parsley for garnish

- 1 Pita Bread
- 1 Tablespoon Pizza Sauce
- 1/4 cup Mozarella Cheese
- 1 drizzle Extra Virgin Olive Oil

- Toppings
- 7 slices Pepperoni or more
- 1/4 cup Sausage
- 1 Tablespoon Onions sliced thin
- 1/2 teaspoon Fresh Garlic minced
Pressure Cooker Roast Potatoes

In the pre-heated pressure cooker, add the vegetable oil
- 4-5 Tbsp. Vegetable Oil
- 1-2 lbs (500g - 1k) Baby or Fingerling Potatoes (however many will just cover the base of your pressure cooker)
- 1 sprig, Rosemary
- 3 Garlic Cloves (outer skin on)
- 1/2 cup Stock
- Salt and Pepper to Taste

- 3/4 cup white sugar
- 1/4 cup vegetable oil
- 2 eggs
- 3/4 cup canned pumpkin
- 1/4 cup water
- 1 1/2 cups all-purpose flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon ground cloves
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon ground nutmeg
- 1/2 cup semisweet chocolate chips
Tomato Noodle Soup

In a large soup pot, add sauce, water, and onion flakes to a boil
- 1 24oz jar RAGÚ® Spicy Italian Style Sauce
- 5 cups water
- 1/4 cup dried onion flakes
- 2 -3 cups cooked small pasta (I used leftover gluten free elbow macaroni)
- 1 can Great Northern Beans (or other white beans), drained well
- 2 cups frozen mixed vegetables
- 1 tbls fresh rosemary
- salt & pepper
Homemade Wendy's Frosty

Mix well and freeze. Mixture does not get hard, more like a thick shake
- 1/2 gal. chocolate milk
- 1 14 oz eagle brand milk
- 1 8 oz cool whip
Old Fashioned Molasses Cookies

Combine all ingredients and beat with an mixer at low speed until mixed, about 3 minutes
- 4 1/2 C flour
- 2 C sugar
- 1 C butter
- 1 C molasses
- 1/2 C milk
- 2 eggs
- 1 t baking soda
- 1 t ground ginger
- 1/2 t ground cinnamon
- 1/8 t salt
- sugar and cinnamon for rolling
