Apple Walnut Tart with Maple Custard

For the Walnut Crust: Preheat the oven to 400 degrees F
- 2 1/2 cups walnut pieces (don’t waste your money on halves)
- 4 tablespoons unsalted butter, melted
- 2 tablespoons granulated sugar
- 1 egg white
- 1/4 teaspoon kosher salt
- 1/4 cup cornstarch
- 1/4 teaspoon kosher salt
- 4 large eggs
- 1/2 cup pure maple syrup
- 1 cup heavy cream
- 1/2 cup milk
- 2 teaspoons vanilla extract
- 2 apples (I used Macoun), quartered, cored, and thinly sliced (keep in lemon water until ready to use)
- juice of a lemon
- 1/4 cup apricot jam, warmed (optional)
Red Quinoa Stuffed Peppers

Prepare your bell peppers- Hollow out, cut the membranes from the peppers, and make sure they can stand upright
- 2 cups red quinoa (the whole box!)
- 4 cups water (you can sub broth for some of the water if you wish)
- A few Tablespoons oil
- 2 green onions, both white and green parts diced
- 1/4 tsp salt
- 1 can Muir Glen diced tomatoes with Italian seasoning
- 3 small fresh basil leaves, chopped
- 2 small fresh oregano leaves, chopped
- 1/2 of a jalapeno to 1 whole jalapeno, chopped (depending on preference) OPTIONAL
- 8 assorted bell peppers
- 1/2 cup cilantro
- 1 bunch kale, chopped (I like the taste and texture of kale in this dish, however, another leafy green could be sub’d in fine)
- Squeeze of lime juice
- AVOCADO TOPPING
- 2 avocados
- juice of one lime
- salt to taste

In a medium size bowl, or 4 cup glass measuring cup, dissolve the sugar in the warm water (about 105 degree F)
- 4 cups all-purpose flour or 1/2 all-purpose and 1/2 whole wheat pastry flour
- 1/4 teaspoon salt
- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 tablespoon sugar
- 1/4 cup hot water (but not boiling, just hot tap water)
- 3/4 teaspoonactive dry yeast
- 3/4 cup warm milk
- 1 cup greek yogurt
- melted butter for brushing (may use olive oil)
- fresh cilantro or other herbs for topping
