Best-ever Butter Cake

Our recipe today is one I developed using Grassland Butter: plain and simple butter cake
- 1 1/2 cups (3 sticks) Grassland unsalted butter, softened
- 2 cups sugar, divided
- 9 pieces large eggs, separated
- 1/2 teaspoon Nielsen Massey Orange Extract
- 1/4 teaspoon Nielsen Massey Lemon Extract
- 1/2 teaspoon cream of tartar
- 3 1/4 cups cake flour, sifted
- 3 1/4 teaspoons baking powder
- 1/2 teaspoon salt
- 1/3 cup evaporated milk
OATMEAL RAISIN COOKIES

So crunchy good...and stores well
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup (2 sticks) butter, softened
- 1 cup white sugar
- 2/3 cup firmly packed light brown sugar
- 2 large eggs
- 1 tablespoon pure vanilla extract
- 3 cups quick-cooking or old-fashioned oats, uncooked
- 1 cup dark seedless raisins
BAKED PORKCHOPS

- 4 pork chops (1/2 to 3/4 inch thick)
- salt and pepper to season pork
- 2 about 2 tablespoons vegetable oil
- 1 large onion, sliced into thick rings
- 1 can cream of chicken soup
- 2 teaspoons worcestershire sauce
- 3 tablespoons banana or tomato catsup

- 1 12 oz pkg (2 cups) good quality semi-sweet chocolate chips
- 1 tablespoon vanilla extract
- 1 stick (1/2 cup) butter or margarine
- 1 1/3 cups white sugar
- 1/4 cup water
- 4 large eggs
- 1 1/2 cups all purpose flour, divided
- 1 teaspoon baking soda
- 1 cup coarsely chopped cashew nuts or walnuts
- 1 cup white chocolate chips
SHAVED ASPARAGUS PIZZA

Fresh asparagus in a pizza, that is screaming "oh yeah" to me
- 1 recipe Jiffy Pizza crust (1 box Jiffy Pizza Crust Mix) or your favorite pizza dough
- 1/2 pound fresh green asparagus, rinsed well and woody ends removed
- store-bought bechamel sauce or Alfredo sauce
- 1/2 pound grated/shredded mozzarella (use very large grater of box grater)
- 1/4 cup grated Parmesan
- 1/2 pound mozzarella, shredded or cut into small cubes
- olive oil
- sprinkle of salt, black pepper and crushed red pepper flakes
CREAMY ASPARAGUS SOUP

Asparagus, leeks, whipping cream
- 2 pounds asparagus, chopped (woody ends removed and reserved to flavor stock)
- 1 large leek (use white and light green part only and sliced thinly)
- 4 cups chicken stock (or 4 cups water and 4 chicken cubes)
- 2 bay leaves
- 1/4 cup (1/2 stick) butter
- 1 cup heavy whipping cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
SARAH'S MOIST CHOCOLATE CUPCAKES

I use a different recipe for layered cakes
- 1 3/4 cups white sugar
- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 3/4 teaspoon iodized salt
- 1/2 cup canola or vegetable oil
- 1 cup evaporated milk
- 2 large eggs
- 2 teaspoons pure vanilla extract
- 1 cup boiling water or leftover brewed coffee
