DESSERT - Mango Pudding

1. Add Jelly powder to 225 ml hot water and mix well until dissolved and smooth
- 2 packets of Mango Jelly, each 85 gm
- 175 ml fresh milk
- 85 ml evaporated milk
- 2 mangoes (pureed)
- 1 egg (optional)
CAKE - Sour Cream Coffeecake

Pineapple Kasekuchen (German Cheesecake)

A German version of cheesecake, absolutely scrumptiously delicious!
- SWEETENED CRUST (muerbeteig):
- 2/3 cup cold butter
- 2/3 cup sifted confectioners sugar
- 2 cups sifted all-purpose flour
- 3/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1 small egg, lightly beaten
- 1 tablespoon milk
- FILLING:
- 1 can crushed pineapple in its own juice, very well drained
- 3 eggs, separated
- 1 cup granulated sugar
- 2 teaspoons vanilla
- 3/4 cup well-softened butter
- 3/4 cup heavy cream
- 3 cups quark ( a soft, unaged fresh cheese, see story above for sources)

OTHERS - Homemade Vanilla Extract

Split vanilla beans lengthwise and put into vodka
- 250 ml 40% level Vodka
- 3 quality vanilla beans (use more if beans are inferior)
- (I bought a 330ml bottle vodka , so I made the extract right in the bottle itself using 6 pods)
BREAD - Parker House Roll

Stir together warm water, 1 tablespoon sugar, and yeast in a small bowl and let stand until foamy, about 5 minutes
- 3 tablespoons warm water (105-110°F)
- 3 tablespoons sugar
- 1/4 -oz package active dry yeast (2 1/2 teaspoons)
- 1 stick unsalted butter
- 1 cup whole milk
- 2 cups bread flour
- 1 1/2 teaspoons salt
- 1 1/2 to 2 cups all-purpose flour
TART - Sausage Arugula Ricotta Tart

1. Preheat oven to 400°F
- cream cheese crust:
- 1 1/4 cup all purpose flour
- 1/8 teaspoon baking powder
- 1/8 teaspoon salt
- 1/4 cup (1/2 stick) unsalted butter, cut into cubes
- 2 1/2 ounces cold cream cheese, cut into cubes
- 1 tablespoon buttermilk
- filling:
- 4 ounces part skim ricotta
- 2 ounces mascarpone cheese, softened
- 2 tablespoons grated parmesan
- 2 tablespoons panko breadcrumbs
- 1/2 teaspoon McCormick’s Marjoram Leaves
- 1 egg yolk, lightly beaten
- 4 ounces cooked and crumbled spicy Italian sausage
- 3/4 cup loosely packed arugula
- 1/2 teaspoon salt
- 1/4 teaspoon cracked black pepper
POTATO - Potato Patties

1. Combine all ingredients together in a bowl

- 2 scallions, thinly sliced
- 1/4 cup shredded Cheddar (or use any cheese you have/like)
- 1/4 cup diced sausage

Position a rack in the lower third of the oven and preheat the oven to 375˚F/190˚C
- 6 oz Bittersweet Chocolate, coarsely chopped
- 10 Tbsp (1 1/4 sticks) Unsalted Butter, cut into pieces
- 3 Tbsp Brandy
- 1/8 tsp Pure Almond Extract (optional)
- 1/8 tsp Sea Salt
- 1/2 Cup (2 1/2 oz) Unblanched Whole Almonds

- 3/4 Sugar
- 1/8 tsp Cream of Tartar
- Powdered Sugar for dusting (optional)
