CAKE - Chocolate Espresso Mousse Cake

CAKE: Preheat oven to 325F
- CAKE:
- 1 stick (113gr) butter
- 1 cup (200gr) sugar
- 1/2 cup (45gr) natural cocoa powder
- 2 eggs
- 1 1/2 cups (185gr) all purpose flour
- 1 teaspoon (5gr) baking powder
- 1 teaspoon (5gr) espresso powder
- 1/2 teaspoon (2.5gr) baking soda
- 1 cup (250ml) warm water
- For the mousse:
- 6 oz semisweet chocolate, chopped
- 1/4 cup (62.5ml) whole milk
- 1 teaspoon espresso powder
- 1/2 stick (55gr) butter
- 1 egg yolk
- 1 cup (250ml) heavy cream, cold
MUFFIN - Strawberry, Raspberry and White Chocolate Muffin

Preheat oven to 190 degrees Celsius (170 degrees Celsius fan-forced)
- 2 teaspoons (10ml) lemon juice
- 250 ml (1 cup) milk
- 125 ml (1/2 cup) oil (we use peanut oil, but any mild-flavoured oil could be used)
- 1 large egg (we use eggs with a minimum weight of 59g)
- 300 g (2 cups) self-raising flour
- 150 g (2/3 cup) caster sugar
- 170 g (1 cup) white chocolate chopped into small chunks
- 200 g berries (we use 100g chopped strawberries and 100g raspberries)
CAKE - Coconut, Lime and Macadamia Cake

Preheat the oven to 180°C/350°F
- Cake:
- 150 g unsalted macadamia nuts
- 3 tablespoons (30g) all purpose flour
- 1/4 teaspoon baking powder
- 4 eggs, separated
- 1/2 cup + 2 tablespoons (124g) granulated sugar
- 1 teaspoon vanilla extract
- finely grated zest of 2 small limes
- 1/3 cup (34g) sweetened shredded coconut
- pinch of salt
- Lime icing:
- 3/4 cup (105g) icing sugar, sifted
- finely grated zest of 1 lime
- 1 1/2 tablespoons lime juice

- 140 grams egg whites, aged

RICE - Mushroom Risotto with Bacon and Peas

Warm chicken stock over medium-low heat in a saucepan to a simmer
- 1 (32-ounce) carton chicken stock
- 3 slices bacon, diced
- 1 pound sliced portabella mushrooms
- 1 pound sliced white mushrooms
- 2 shallots, diced
- 2 cloves garlic, diced
- 12 ounces Arborio rice
- 1 (12-ounce) package frozen peas
- 4 tablespoons butter, cut into pieces
- salt, to taste
- black pepper, to taste
- 1/4 cup grated Parmesan cheese + additional for serving

- 3 cups King Arthur Unbleached All-Purpose Flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon Pizza Dough Flavor, optional
- 1/2 cup butter, cut in pats
- 1 cup yogurt, buttermilk, or sour cream (low-fat is fine)
- 2 cups cooked, sliced breakfast sausage links (1/2" pieces)
- 1 cup diced cheddar cheese
CAKE - Avocado Milk Cake

1. Combine avocado flesh with lemon juice and mash until fine
- 115 gm butter
- 50 gm sugar
- 120 gm avocado flesh
- 1 Tbsp lime/lemon juice
- 150 gm condensed milk
- 200 gm cake flour
- 100 gm all purpose flour
- 1 tsp baking powder
- 1/4 tsp baking soda
- 2 large eggs
CAKE - Cassava Cake

1. Preheat oven at 160/180C
- 90 gm butter
- 160 gm sugar
- 3 large eggs
- 1/2 Tbsp vanilla extract
- 1/2 cup evaporated milk (I used so much more, cos I read wrongly, but not a bad decision :p)
- 140 gm self raising flour (or substitute with 140gm cake flour + 1/2 Tbsp baking powder)
- 1 cup packed tightly, finely grated squeezed dry cassava (about 300gm, how much it weighs depends on how dry it is)
