DIP - Hot + Cheesy Corn Dip

Preheat oven to 350 degrees F
- 4 slices thick-cut bacon, chopped
- 1 teaspoon olive oil
- 3 1/2 cups sweet corn
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 sweet onion, choppd
- 1/2 red pepper, chopped
- 1 jalapeno, seeded and chopped
- 4 green onions, sliced
- 2 garlic cloves, minced or pressed
- 1/2 teaspoon smoked paprika
- 1 (17 ounce) container of 2% Greek yogurt
- 5 ounces cheddar cheese, freshly grated
- 5 ounces monterey jack cheese, freshly grated
COOKIES - Amos Chocolate Chips Cookies

1) Use fingertips to rub (A) till lumpy (I did so with a help of a fork)
- (A)
- 250 g cold butter (cut into small cubes)
- 1/2 cup brown sugar
- 2 1/2 cups plain flour*
- 1/2 tsp baking soda*
- 1/2 tsp baking powder*
- 1/2 tsp salt
- Can be replaced by self-raising flour
- (B)
- 1 beaten egg (about 55g with shell)(I used A size egg)
- 50 g melted chocolate (set aside to cool)(I replaced by 2 tbsp of chocolate milk)
- 1 tsp vanilla extract (not in the original recipe)
- (C)
- 150-200 g chocolate chips (I also added some chopped walnut)
PORK - Pork Stew 卤猪肉

1. In a small pot, put in 1-2 Tbsp of oil
- Seasnonings:
- 600 gm pork belly (skin on), cut into 1/2 inch pieces.
- 20 white peppercorns, cracked
- 1 star anise
- 1 inch ginger
- 3 cloves garlic, skin on, smashed
- 1 tsp cornstarch mixed with some water
- 3 Tbsp light soy sauce
- 2 Tbsp dark soy sauce (use less if using dark caramel sauce)
- 1 tsp oyster sauce
- 1 tsp sugar
- 1 Tbsp Shao Xing wine
SOUP - Clams in Broth 上汤蝲蝲

1. In a small pot, put in 1 tsp oil and saute rinsed anchovies for a while
- 1 kg lala clam
- 1/2 bowl dried anchovies, rinsed
- 1 L water
- 2 cloves garlic, peeled and smashed, do not chop
- 2 shallots, sliced
- 2 inch ginger, julienned
- 2 Tbsp goji berries (wolfberry)
- Large handful of Chinese Celery / Kan Choy/ Daun sup
- 2 Tbsp Shao Xing Wine
- Salt to taste
BREAKFAST - Waffle Sweet Potato Waffles

Put cubed sweet potatoes in a steamer basket
- 1 1/2 cups peeled and cubed sweet potatoes
- 2 cups all purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 6 egg whites, at room temperature
- 1 cup milk
- 1/4 cup firmly packed light brown sugar
- 1/4 cup butter, melted
- 1 tablespoon grated orange rind
- Vegetable spray, for waffle iron
CAKE - Orange Yogurt Bread

1. Preheat oven to 350 degrees
- Glaze:
- 2/3 cup butter, softened
- 1 1/4 cups sugar
- 2 eggs
- 1/2 cup plain yogurt
- 1/2 cup orange juice
- 1 tablespoon grated orange peel
- 2 1/2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup confectioners’ sugar
- 2 to 3 teaspooons orange juice
SCONE - Cream Cheese And Chive Biscuits

Line a baking sheet with parchment paper; set aside
- 2 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1 1/4 teaspoons salt
- 1 tablespoon granulated sugar
- 1/4 cup finely chopped fresh chives
- 1 stick (1/2 cup) unsalted butter, cold, cut into small pieces
- 4 ounces cream cheese, cold, cut into small pieces
- 1 1/4 cup buttermilk
VEGGIE - Fly Head Stir Fry 苍蝇头

1. Soak preserved black beans in tap water for 30 mins
- 300 gm pork mince
- 200 gm garlic chive buds (kuchai flower), cut to 8mm lengths.
- 30 gm preserved black beans (dousi)
- 1 Tbsp sugar + 1 tsp oil
- 1 hot chilli, diced small
- 1 sweet chilli, diced small
- 1 Tbsp minced garlic
- 2 Tbsp Shao xing wine
- 1 Tbsp light soy sauce
CAKE - Red Berries Tray Bake with Cheesecake Ripple

1. Rinse fruits and set aside to air dry
- Cream cheese mixture
- 125 gm cream cheese
- 2 Tbsp sugar
- 1 tsp vanilla extract
- Cake batter
- 120 gm butter
- 120 gm soft brown sugar
- 2 eggs
- 1/2 tsp vanilla extract
- 140 gm all purpose flour
- 1 / 2 tsp baking powder
- 200 gm raspberries and strawberries
