Preheat oven to 350 degrees F

  • 4 slices thick-cut bacon, chopped
  • 1 teaspoon olive oil
  • 3 1/2 cups sweet corn
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 sweet onion, choppd
  • 1/2 red pepper, chopped
  • 1 jalapeno, seeded and chopped
  • 4 green onions, sliced
  • 2 garlic cloves, minced or pressed
  • 1/2 teaspoon smoked paprika
  • 1 (17 ounce) container of 2% Greek yogurt
  • 5 ounces cheddar cheese, freshly grated
  • 5 ounces monterey jack cheese, freshly grated

1) Use fingertips to rub (A) till lumpy (I did so with a help of a fork)

  • (A)
  • 250 g cold butter (cut into small cubes)
  • 1/2 cup brown sugar
  • 2 1/2 cups plain flour*
  • 1/2 tsp baking soda*
  • 1/2 tsp baking powder*
  • 1/2 tsp salt
  • Can be replaced by self-raising flour
  • (B)
  • 1 beaten egg (about 55g with shell)(I used A size egg)
  • 50 g melted chocolate (set aside to cool)(I replaced by 2 tbsp of chocolate milk)
  • 1 tsp vanilla extract (not in the original recipe)
  • (C)
  • 150-200 g chocolate chips (I also added some chopped walnut)

1. In a small pot, put in 1-2 Tbsp of oil

  • Seasnonings:
  • 600 gm pork belly (skin on), cut into 1/2 inch pieces.
  • 20 white peppercorns, cracked
  • 1 star anise
  • 1 inch ginger
  • 3 cloves garlic, skin on, smashed
  • 1 tsp cornstarch mixed with some water
  • 3 Tbsp light soy sauce
  • 2 Tbsp dark soy sauce (use less if using dark caramel sauce)
  • 1 tsp oyster sauce
  • 1 tsp sugar
  • 1 Tbsp Shao Xing wine
