CAKE - Ultimate Chocolate Mousse Cake

1. Preheat the oven to 180°C/fan 160°C/gas 4
- Ingredients:
- 225 g plain chocolate (70% cocoa solids)
- 5 large free-range eggs, separated
- 150 g golden caster sugar
- 125 g unsalted butter, softened
- 50 g ground almonds
- 4 tbsp Grand Marnier (optional)
- Rice paper daisies (optional), to decorate
- For the mousse filling:
- 142 ml pot double cream
- 225 g plain chocolate (70% cocoa solids)
- 4 large free-range eggs, separated
- For the chocolate icing:
- 200 g plain chocolate (70% cocoa solids)
- 50 g butter
- 2 tbsp icing sugar
PASTA - Spaghetti “Carbonara” with Duck Prosciutto, Fava Beans & Ramps

Bring 6 quarts of water to a boil and add 2 tablespoons salt
- 1 duck prosciutto (cured duck breast), thinly sliced
- rendered duck fat (or about 3 tablespoons duck fat)
- 16 ramps, cleaned
- 1 cup fava beans, cleaned and blanched
- 1 pound dry spaghetti
- 1 cup Parmigiano-Reggiano, grated
- 4 eggs, separated

- For the spice mix:
- equal parts in ounces or grams (I usually go by 30 grams of each & refrigerate)
- cinnamon
- cardamom
- clove
- star anise
- black peppercorns
- dried lemon peel
- dried orange peel
- For the cakes:
- 1/2 cup honey
- 1/3 cup packed dark brown sugar
- 3/4 cup milk
- 1 cup Jeanne's gluten free all purpose flour mix or regular flour
- 1 1/2 teaspoons baking powder
- 1 teaspoon spice mix for Pain d'epices
- 4 tablespoons unsalted butter, kept cold
- 1 large egg
- Sugar coating:
- equal parts sugar and equals spice mix stirred together well.

- 1 1/4 cups light brown sugar
- 1 cup butter (2 sticks), softened

SEAFOOD - Spicy Lala 香辣啦啦

Heat wok, saute garlic in oil til fragrant, add in onions and chili
- 500 gm lalas (parboiled)
- 1/2 cup finely chopped big red onion
- 1 pip garlic, finely chopped
- 1 red chili, finely chopped (omit if u're no fan of chili)
- 1 Tbsp meat curry powder (I use Baba's)
- 3 Tbsp chilli sauce (Maggi type)
- 3/4 cup water
- 3/4 tsp salt
- 2 tsp sugar
- 2 Tbsp oil
- 1 Tbsp chopped green onions
BAR - Marshmallow Cereal Treats

1. Lightly grease and 8”x 8” baking dish and set aside
- 6 tablespoons unsalted butter
- 1 (10.5 ounce) bag marshmallows (or 12 ounces homemade marshmallows)
- 5 1/2 cups cereal of your choice
- 1 cup mix-ins of choice and/or 1 tablespoon minced fresh herbs or spices of choice
CHICKEN - Skillet Chicken with Bacon and White Wine

BACON: Preheat the oven to 350 degrees
- 3 slices bacon
- 1/2 cup flour (I used white whole wheat)
- salt and pepper
- 2 teaspoon herbes de provence
- 1 1/2 - 2 lbs. chicken thighs with skin**
- 1-2 tablespoons olive oil
- 2 shallots, thinly sliced
- 1/2 cup dry white wine
- 1 cup chicken stock
- dried or fresh parsley for topping
BREAD - 17 Hours White Bread Loaf

1. Knead all ingredients of the main dough together, except the butter
- Note:
- Pre-ferment Dough
- 480 g bread flour
- 274 ml water
- 14 g fresh yeast ( I used 8 g instant yeast)
- 7 g sea salt
- 14 g skim milk powder (I used full cream milk powder)
- Dissolve the yeast in water. Add bread flour, sea salt, skim milk powder and knead until soft. Cover the dough in cling wrap or a big zip log bag. Refrigerate to let it prove for 17 hours.
- The dough will expand in the fridge. So whatever container you put the dough in, do give some allowance for growth.
- Main Dough:
- 206 g bread flour
- 7 g sea salt
- 69 g caster sugar
- 199 ml water
- 3 g fresh yeast (I used 3g instant yeast)
- 48 g unsalted butter, room temperature
PORK - Dong Po Pork 东坡肉

1. Bring a pot of water to boil and cook pork belly for 5 minutes
- 1 kg (+/-200gm) pork belly, skin on (original recipe called for 1kg, but I only have 800gm, it worked well, and I think the seasoning will even be enough for 1.2kg)
- 100 gm spring onions
- 50 gm ginger (weighed skin on)
- 500 gm Shao Xing Wine (the one I used was fermented for 5 years, and is more expensive than the regular 2 year old wines)
- 100 gm light soy sauce
- 20 gm dark soy sauce
- 80 gm brown candy sugar(1pc) or rock sugar
PASTA - Portobello and Leek Carbonara
