COOKIES - Homemade Oreos

Cookies Making: Preheat oven to 350
- Cookies:
- 2 & 1/2 c. all-purpose, unbleached flour
- 1/2 c. dutch-process cocoa (natural is OK, too)
- 1/2 tsp. coarse salt
- 1 c. unsalted butter
- 1 c. sugar
- 1 egg
- 1 tsp. vanilla
COOKIES - White Chocolate Chunk Macadamia Cookies

Preheat oven to 375 degrees F
- 2 cups unbleached all-purpose flour (9.8 oz) – I fluffed the flour and scooped it
- 1/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 2 sticks unsalted butter, cool room temperature (8 oz)
- 1/2 cup granulated sugar
- 1 cup packed dark brown sugar
- 2 teaspoons vanilla extract
- 1 large egg
- 1 large egg yolk
- 9 oz white chocolate, chopped or 1 1/2 cups white chocolate chips Roseanne uses Guittard
- 1 cup unsalted roasted macadamia nuts, roughly chopped
- 1/2 cup unsweetened flaked coconut, toasted and cooled

Preheat your oven to 275ºF/140ºC
- For the Meringue:

- 3 egg whites
- 3/4 cup sugar
- 1 teaspoon cornstarch
- 1 ounce (25 grams) semisweet chocolate, grated
- For the Filling:
- 5 ounces (140 grams) semisweet chocolate
- 2 tablespoons milk
- 2 cups heavy whipping cream (I used 2 1/2 cups)
- 2 tablespoons sugar (use more or less depending on your taste)
- 12 to 16 ounces raspberries (350 to 450 grams)

- 1 heaped tsp fennel seeds (小茴,jintan manis), coarsely ground
- 1 tsp Shao Xing Wine
- 2 Tbsp flour
- 2-3 Tbsp light olive oil
- 1 large bulb of fennel 茴香
- 1 large onion
- 2 cloves garlic
- 1 Tbsp butter
- 2 Tbsp pine nuts
- 1 Tbsp worcestershire sauce
- 1 tsp sugar (adjust to taste accordingly)

- 1 1/4 cups all-purpose flour
- 1 cup old fashioned rolled oats
- 1/2 teaspoons baking soda

- 6 tablespoons creamy peanut butter, melted and cooled
