EGG CUSTARD FILLING: 1
- EGG CUSTARD FILLING:
- # 400g milk (3.3 cups/825mL)
- # 350g eggs (7 medium eggs/6 large eggs)
- # 275g sugar (1.5 cups/375mL) [or less]
- # 1 pinch of salt (1/8 teaspoon)
- TART CRUST:
- # 220g flour (about 1.5 cups)
- # 2-3 tablespoons powdered sugar
- # 150g butter, softened and cubed (2/3 cups)
- # 50g eggs (1 egg)
- # 2g salt (1/2 teaspoon)
DESSERT - Cendol With Palm Sugar Syrup And Coconut Milk

Make the palm sugar syrup: Place palm sugar, pandan leaves, and water in a saucepan
- Palm Sugar Syrup:
- 100 grams (10 Large) Pandan Leaves, cut into smaller pieces
- 750 ml Water
- 100 grams Mung Bean/Green Pea Flour
- 25 grams Corn Flour
- A pinch of Sea Salt
- 200 grams Palm Sugar/Gula Melaka
- 2 Pandan Leaves, knotted
- 100 ml Water
- 2 Cups Coconut Milk
PORK - Chinese Bouncy Pork Balls 貢丸

1. Mince the pork in a food processor until a paste is form
- 500 g pork or beef, cut to small pieces
- [just use the cheapest cut since it'll be turned to mush anyway]
- 1/2 cup (125ml) icy cold water
- 1 tablespoon fish sauce
- 1/2 teaspoon salt
- 1/2 tablespoon sugar
- 1/2 tablespoon oil
- 2 tablespoons cornflour
- 1 1/4 teaspoon baking powder
- 1/4 teaspoon white pepper

- Seasoning:
- 1 kilo belly pork (minced)
- 10 shallots (chopped)
- 6 pips garlic (chopped)
- 100 g tapioca flour
- 2 eggs
- A little cooking oil
- 2 tsps salt
- 1 tsp MSG
FISH - Pan Grilled Rockfish Fillet In Banana Leaf

Place two banana leaves on a hot cast iron pan and grease with peanut oil
- 4 pieces of Rockfish Fillets (about 500 grams), divided
- 6 Okra, sliced, divided
- 4 to 5 Four Angle beans, sliced, divided
- 1/2 Small Red Onion, sliced, divided
- 8 Tbsp of Sambal Paste With Lemongrass, divided
- 4 Pieces of Banana Leaves, divided
- 3 Tbsp of Soaked Dried Shrimps (optional)
- Sea Salt, to taste
- Peanut Oil, for greasing the banana leaf

CAKE - Marzipan cake

Pre-heat oven to 180ºC (350ºF) Grease a long cake or loaf pan
- 1/4 c butter
- 1/4 c coconut oil
- 1 c sugar
- 3 eggs
- juice of 1/2 lime
- grated rind of 1 lime – not tons
- 1/4 cup milk or coconut milk
- 1/2 c shredded coconut (unsweetened)
- 2 tsp almond extract
- 2 cups almond meal/flour (firmly packed)
- 1 tsp baking powder
- few dashes of salt
- flaked almonds for the bottom of the pan (optional)

- a few slices of thinly cut oven roasted turkey breast (optional)

SCONE - Baked English Muffin

1) Stir together all the ingredients except the semolina or cornmeal
- 2 1/4 cups King Arthur Unbleached All-Purpose Flour
- 1/2 cup Hi-maize Natural Fiber
- 1 teaspoon salt
- 1 tablespoon Pizza Dough Flavor, optional
- 2 teaspoons baking powder
- 2 tablespoons sugar
- 2 teaspoons instant yeast
- 1 cup + 2 tablespoons lukewarm milk*
- 2 tablespoons melted butter
- 2 teaspoons vinegar, white or cider
- cornmeal or semolina to coat the muffins
- Or substitute 1/4 cup (1 1/4 ounces) Bakers' Special Dry Milk, and 1 cup + 2 tablespoons (9 ounces) lukewarm water; don't mix them together, the dry milk doesn't reconstitute.
