TOFU - Crispy Mashed Tofu

1. Mix everything together with a mixer (or by hand, but I was lazeeeeeee) 2
- Coating:
- 3 pieces Japanese egg tofu
- 125 gm Mackerel fish paste (鲛鱼肉泥)
- 1 large egg
- 2 Tbsp carrot shreds
- 2 Tbsp finely sliced spring onions and parsley (can use coriander if preferred)
- 2 waterchestnuts, finely diced
- 1 slice sandwich ham (30gm), finely diced
- 1 Tbsp cornstarch
- 1/2 tsp salt and pepper to taste
- 1/2 cup Potato starch
TART - Spinach, Mushroom, Turkey Bacon, Feta Quiche

Preheat oven to 375°. Bake pastry shell for 8-10 minutes or until browned
- 1 store-bought frozen pastry shell, such as Wholly Wholesome brand
- 5 slices turkey bacon
- 2 tsp olive oil
- 1/2 cup chopped onion
- 2 cups chopped spinach
- 1 cup chopped mushrooms
- 2 eggs
- 3 egg whites
- 2/3 cup half & half
- 1/2 cup crumbled feta cheese
- salt & pepper to taste
FISH - Oriental Butter Garlic Cod Fish

1. Season the cod fish with 2 tbsp light soy sauce, garlic powder and a sprinkling of the diced garlic and ginger
- 1 pc Cod fish steak
- 4 tbsp light soy sauce
- 2 tsp garlic powder
- 5 curry leaves (if you can’t find any, you can totally use Thai basil leaves or any herb with a spicy scent like marjoram)
- 5 tbsp diced garlic
- 1 tbsp diced fresh ginger
- 4 tbsp butter
- 1/2 cup water
FROSTING - Strawberry Cream Cheese Frosting

STRAWBERRY SAUCE: 1. Soak strawberries with about 1-2 tbs sugar for 15 minutes
- STRAWBERRY SAUCE:
- 2 cups of fresh strawberries, cut in half and stem removed
- sugar to taste
- CREAM CHEESE FROSTING:
- 8 ounces or 1 package of cream cheese
- 1/2 stick butter
- 4 cups sifted powdered sugar
- approximately 1/4 cup of strawberry sauce
BREAKFAST - Creamy Spinach and Potato Breakfast Casserole

Prepare: Preheat the oven to 400 degrees
- 1 1/2 tablespoon olive oil, divided
- 1/2 cup diced yellow onions
- 8 ounces raw 99% lean ground turkey
- 2 teaspoons chili powder
- 1/2 teaspoon onion powder
- 3 ounces fresh baby spinach leaves
- 1 tablespoon minced garlic
- 1 tablespoon minced fresh sage
- 2 large eggs
- 1/3 cup fat free milk
- 2/3 cup grated raw potatoes, without skin
- 1/2 cup shredded low moisture Mozzarella cheese
- 2 tablespoons shredded Parmesan cheese
- salt and pepper to taste
CAKE - Cocoa Cheese Layered Cake 可可芝士千层蛋糕

Preheat oven 180C for 15mins
- (A):
- 200 g butter
- 150 g cream cheese
- 130 g sugar
- 14 egg yolk
- 5 tbsp condense milk
- (B):
- 130 g sugar
- 7 egg white
- 1/4 tsp cream of tartar
- (C):
- 180 g Hong Kong flour
- 1 tsp baking powder
- (D):
- Cocoa Paste (2 tbsp cocoa powder + 3 tbsp hot water + 1 tsp chocolate emulco)
- Few drops of yellow colour
DESSERT - Green Tea Crêpe Cake

For the crêpes: Combine all the ingredients by hand or in the bowl of a blender
- For the green tea crêpes:
- 1 cup all-purpose flour
- 1 cup milk
- 1/2 cup lukewarm water or beer
- 4 large eggs
- 4 tablespoons unsalted butter, melted
- 3 tablespoons sugar
- 1 pinch salt
- 2 tablespoons matcha powder
- 1 tablespoon Cointreau or Grand-Marnier
- For the pastry cream:
- 2 cups whole milk
- 6 large egg yolks
- 1/2 cup sugar
- 1/3 cup cornstarch
- 1 teaspoon vanilla extract
- 2 tablespoons butter, at room temp’
- zest of 1/2 orange
- 1 tablespoon Grand-Marnier (optional)
- 1/2 cup heavy cream, whipped (optional)
- To serve:
- Candied orange zest (optional)
PASTE - Spicy Tomato Chilli Paste

Throw everything into a food processor, pulse until you end up with chunky pieces (I pulsed mine too much)
- 1 head of garlic, peeled
- 8 cloves of shallot, peeled
- 10 small red chillies (remove seeds if you want it mild, or use large chillies)
- 2 tomatoes, cut into 8 sections each
- 1 candle nut
- 2 tsp ground corriander seeds
- 2 tsp ground cumin
- 1 tsp salt
- 2 tsp sugar
- a dash of white pepper
- a dash of fish sauce
- olive oil
CHICKEN - Spicy Popcorn Chicken Bites

Preheat the oven to 425 degrees
- 3 cups Kettle Brand Chips - I used Buffalo Bleu flavor
- 1 1/2 cups flour
- a pinch of cayenne - about 1/4 teaspoon to start, more for additional spiciness (or omit if you don't want them to be spicy)
- 2 eggs
- 1/4 cup half and half (milk works, too)
- 1 lb. boneless skinless chicken breasts
- olive oil, salt, and pepper
- honey mustard dipping sauce
