Spicy Orange Greens

Happy Herbivore The lightly spicy orange sauce in this dish is one of my favorites
- 3 oz soba noodles (optional)
- 1/3 c water
- 2 tbsp low-sodium soy sauce
- 2 tbsp minced fresh ginger
- 1/4 tsp red pepper flakes
- 1 tbsp orange marmalade
- 4 c greens, chopped (collard greens, broccoli etc)
Spicy Potatoes and Caulifower

Serve this easy dish with a cucumber and yogurt raita
- 8 oz potatoes
- 5 tbsp groundnut oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/4 tsp ground turmeric
- 1/4 tsp cayenne pepper
- 1 fresh green chilli, seeded and finely chopped
- 1 medium cauliflower, broken into small florets
- 4 Tbsp water
- 1 tsp cumin seeds
- 2 garlic cloves, cut into shreds
- 1-12 Tbsp chopped fresh coriander
- salt
Golden Vegetable Paella

Hearty enough for the hungriest guests, this takes very little time to prepare and cook
- pinch of saffron strands
- 3 cups hot vegetable stock
- 6 Tbsp olive oil
- 2 large onions, sliced
- 3 garlic cloves, chopped
- 1 1/2 cups long grain rice
- 1/3 cup wild rice
- 6 oz pumpkin, chopped
- 1 large carrot, matchsticks
- 1 yellow pepper, sliced
- 4 tomatoes, peeled and chopped
- 1 1/2 cups oyster mushrooms, quartered
- salt and pepper
- strips of red, yellow and green pepper to garnish
Bean 'Dip'

Drain cans and rinse vegetables
- Dressing:
- 1 can black eyed peas
- 1 can black beans
- 1 can pinto beans
- 1 can navy beans
- 1 shoe peg corn (small canned corn)
- 1/2 red pepper, finely chopped
- 1/2 yellow pepper, finely chopped
- 1 small onion, finely chopped
- a few small hot peppers, according to heat desired
- chopped cilantro to taste
- 1/2 cup oil
- 1/2 cup sugar
- 1/2 cup vinegar
- 1/4 cup water
