Chuck's Favorite Mac and Cheese

1. Preheat oven to 350 degrees F (175 degrees C)
- 1 (8 ounce) package elbow macaroni
- 1 (8 ounce) package shredded sharp
- Cheddar cheese
- 1 (12 ounce) container small curd cottage
- cheese
- 1 (8 ounce) container sour cream
- 1/4 cup grated Parmesan cheese
- salt and pepper to taste
- 1 cup dry bread crumbs
- 1/4 cup butter, melted
Torciano's Lasagna Bolognese

Preheat oven to 375°F (180°C)
- BOLOGNESE SAUCE
- 1/4 cup extra virgin olive oil Use the excellent Tuscan extra virgin olive oil made from genuine Torciano's olive
- 2 cloves minced garlic
- 1 cup chopped onion
- 1/2 cup chopped celery
- 1/2 cup chopped carrots
- 1-1/2 pounds ground beef
- Salt and pepper
- Two 35-ounce cans peeled tomatoes, crushed by hand
- 6 ounces tomato paste
- BECHAMEL SAUCE
- 1 stick. unsalted butter
- 3/4 c. quick-mixing flour
- 4 c. milk
- 1/2 tsp. freshly grated nutmeg
- 1/2 tsp. salt
- Freshly ground pepper to taste
- LASAGNA PASTA
- PECORINO CHEESE, GRATED
Japanese Cucumber Salad

Peel cucumbers to leave alternating green stripes
- 2 medium cucumbers or 1 large English cucumber
- 1/4 cup rice vinegar
- 1 teaspoon sugar
- 1/4 teaspoon salt
- 2 tablespoons sesame seeds, toasted (see Tip)
Easy Fish Tacos

World's Best Lasagna

1. In a Dutch oven, cook sausage, ground beef, onion, and garlic over medium heat until well browned
- 1 pound sweet Italian sausage
- 3/4 pound lean ground beef
- 1/2 cup minced onion
- 2 cloves garlic, crushed
- 1 (28 ounce) can crushed tomatoes
- 2 (6 ounce) cans tomato paste
- 2 (6.5 ounce) cans canned tomato sauce
- 1/2 cup water
- 2 tablespoons white sugar
- 1 1/2 teaspoons dried basil leaves
- 1/2 teaspoon fennel seeds
- 1 teaspoon Italian seasoning
- 1 tablespoon salt
- 1/4 teaspoon ground black pepper
- 4 tablespoons chopped fresh parsley
- 12 lasagna noodles
- 16 ounces ricotta cheese
- 1 egg
- 1/2 teaspoon salt
- 3/4 pound mozzarella cheese, sliced
- 3/4 cup grated Parmesan cheese
Peanut Butter Silk Cake

1. Heat oven to 350°F (or 325°F for dark or nonstick pans)
- 1box1 box yellow cake mix
- 1 1/4cups1 1/4 cups water
- 1/2cup1/2 cup creamy peanut butter
- 1/3cup1/3 cup vegetable oil
- 33 eggs
- 1/2cup1/2 cup butter or margarine
- 1/2cup1/2 cup packed brown sugar
- 2cup2 cup whipping cream (or bit less to thicken)
- 1cup1 cup creamy peanut butter (or bit more to thicken)
- (May also cut whip cream/pb in half & use only for filling, frost with choc frosting.)
- 1/2-1cup1/2-1 cup chopped peanuts (depending on whether pressing onto sides or not)
- Chopped choc/pb candy - Reese's Sticks work well (6 sticks)
Shrimp Taco Marinade

Blend marinade ingredients in blender, add to shrimp
- Slaw:
- 1/2 jalapeno
- 1 handful cilantro
- 1 clove garlic
- 1/2 avocado
- 1 T honey
- Lime juice
- Olive oil
- Salt & pepper
- 2 lbs peeled shrimp
- Shredded napa cabbage
- Chopped cilantro
- Adobo seasoning, or salt, cumin, coriander
- Plain greek yogurt
Pink Pony Cake

- 2 baked dome cakes (baked in a 1 1/2-quart bowl)
- 2 cups pink frosting

- *May want to also bake a round cake to add to base/middle
- 1/2 gallon quality ice cream (any flavor)
- 1 1/3 8.5-oz. pkgs. fudge sticks (chocolate or peanut butter)
- 2 cups heavy cream
- 1/4 cup sugar
- 1/2 tsp. vanilla extract
- Blue food coloring
- Gummy rings
- Gobstoppers
- Paper umbrellas
- Plastic figures
- Licorice
- Decorators' frosting

Prepare the chicken: Whisk the egg white, cornstarch and rice wine in a bowl
- For the Chicken:
- Ingredients
- 1 large egg white
- 1 tablespoon cornstarch
- 1 tablespoon Chinese rice wine or dry sherry
- 1 1/2 pounds skinless, boneless chicken breasts, diced
- For the Stir-Fry Sauce:
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon low-sodium soy sauce
- 1 tablespoon Chinese rice wine or dry sherry
- 1 teaspoon toasted sesame oil
- 2 teaspoons cornstarch
- For the Noodles:
- 2 bundles cellophane noodles
- Peanut oil, for frying
- For the Stir-Fry:
- 4 tablespoons peanut oil
- 3 cloves garlic, minced
- 1 teaspoon minced peeled ginger
- 1 jalapeno pepper, seeded and minced
- 4 scallions; 2 minced, 2 cut into 1-inch pieces
- Kosher salt
- 1/4 teaspoon sugar
- 1/2 pound shiitake mushrooms,stemmed and diced
- 3/4 cup diced water chestnuts
- Small lettuce leaves, for serving
- Soy sauce, chili paste and/or hot mustard, for serving
