Appetizers (Grilled Clams with Basil Breadcrumbs)

Heat a gas grill or prepare a charcoal grill with hot coals
- 1 1/2 cups coarse bread crumbs, toasted
- 2 cloves garlic, minced
- 3 tablespoons good olive oil
- 2 tablespoons fresh lemon juice
- 6 sun-dried tomato halves in oil, drained and coarsely chopped
- 1/2 cup chopped fresh basil leaves
- 1/4 cup toasted pine nuts
- 3/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 24 littleneck clams, scrubbed clean
- 2 1/2 tablespoons melted butter
Drinks (Super Thick Hot Chocolate)

In a saucepan, combine the whole milk, evaporated milk and vanilla and warm up over low heat
- 3 cups whole milk
- 1 cup evaporated milk
- 1/2 teaspoon pure vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1/4 cup sugar
- 2 tablespoons cornstarch
- Pinch of ground cinnamon

1)Fill a large, 1-gallon stock pot with a pasta insert, 3/4 full with water
- Essence:
- 1/4 cup plus 3/4 teaspoon salt, divided
- 1 pound dry penne rigate
- 3 tablespoons olive oil, divided
- 1 pound peeled, deveined large shrimp
- 2 tablespoons plus 1 teaspoon Essence, divided
- 3/4 pound boneless, skinless chicken breast, 1-inch diced
- 3/4 pound andouille sausage, diced into 1/2-inch pieces
- 1/2 cup yellow onion, small diced
- 1/2 cup green bell pepper, small diced
- 1 tablespoon minced garlic
- 1/2 cup chicken stock
- 1 (14.5-ounce) can diced tomatoes
- 1 tablespoon freshly chopped thyme leaves
- 1/2 cup heavy cream
- 2 tablespoons freshly chopped basil leaves
- 1/2 cup grated Parmesan
- 2 1/2 tablespoons paprika
- 2 tablespoons salt
- 2 tablespoons garlic powder
- 1 tablespoon black pepper
- 1 tablespoon onion powder
- 1 tablespoon cayenne pepper
- 1 tablespoon dried oregano

1)In a large saucepan, heat the olive oil over medium-high heat
- 2 tablespoons extra-virgin olive oil
- 1 onion, finely chopped
- 6 cloves garlic, thinly sliced
- 6 skinless, boneless chicken thighs, cut into 1/2-inch pieces
- 2 canned chipotle chiles in adobo sauce, finely chopped, plus 2 tablespoons adobo sauce
- 6 cups chicken broth
- 1/2 cup chopped fresh cilantro
- Juice of 2 limes
- Salt and pepper
- 1 hass avocado, thinly sliced lengthwise into 12 pieces
- Crushed tortilla chips
Cocktails (Banana Cream Pi)

This drink can be mixed with ice added,or put into a blender with ice,to be crushed
- 1 Oz Malibu rum
- 1 Oz banana liqueur
- fill with pineapple juice
Soups (Ground Round Mexican Chicken and Tortilla)

- 1 pound of cubed chicken breast (browned)
- 1 can of Fiesta nacho cheese soup
- 1 can of cream of chicken soup
- 1 soup can of milk
- 1 can of enchilada sauce (mild only)
- Crushed tortilla chips
- Shredded cheddar cheese
Meals (Mussels In Spicy Broth)

1)In a large pot, heat the olive oil over medium-high heat
- 1/4 cup extra-virgin olive oil, plus more for drizzling
- 3 cloves garlic, finely chopped
- 1/4 teaspoon crushed red pepper
- One 28-ounce can crushed tomatoes
- 1 tablespoon red wine vinegar
- 1/2 teaspoon sugar
- 1/3 cup chopped flat-leaf parsley
- 2 1/2 pounds mussels, scrubbed and debearded
- 4 thick slices peasant bread
Smoothies (Banana Split)

In a blender, combine the first five ingredients; cover and process until smooth
- 2 medium ripe bananas
- 1 can (8 ounces) crushed pineapple, drained
- 1-1/2 cups milk
- 1/2 cup fresh or frozen unsweetened sliced strawberries
- 2 tablespoons honey
- 5 ice cubes
- Whipped topping, chocolate syrup and maraschino cherries

- 18 uncooked large shrimp (about 3/4 pound)
