Mustard-Dill Tortellini Salad

Serve on short skewers for easy pickup but can be served tossed in a bowl
- Mustard-Dill Vinaigrette:
- 1 (9oz) pkg refrigerated cheese-filled torellini
- 1 (8oz) pkg frozen sugar snap peas (or fresh)
- 68 (4inch) wooden skewers
- 1 pt grape tomatoes cut in half
- Mustard-Dill Vinaigrette*
- 1/2 cup white wine vinegar
- 2 Tbsp chopped fresh dill
- 3 Tbsp Dijon mustard
- 2 pressed garlic cloves
- 2 tsp sugar
- 1 1/4 cup olive oil
- kosher salt
- pepper
- 1 *1 (12oz) bottle light Champaign vinaigrette may be substituted.
Corn and Crab Chowder

1. Pick crabmeat, removing any bits of shell 2
- 1 lb fresh lump crabmeat, drained*
- 6 bacon slices
- 2 celery ribs, diced
- 1 med green bell pepper, diced
- 1 med onion, diced
- 1 jalapeno pepper, seeded and diced
- 1 (32oz) container chicken broth
- 3 Tbsp all purpose flour
- 3 cups fresh corn kernel (6ears)
- 1 cups whipping cream
- 1/4 cup chopped fresh cilantro
- 1/2 tsp salt
- 1/4 pepper
- Oyster crackers
Italian Skewers

1. Cut cheese into 16 cubes
- 1 (8oz) block mozzarella cheese
- 16 (4inch) Genoa salami slices
- 1 (14oz) can small artichoke hearts, drained and halved
- 1 pt grape tomatoes
- 1 (6oz) jar large pitted Spanish olived drained
- 16 (6 to 12 inch) wooden skewers
- 1 (16oz) bottle balsamic-basil vinaigrette
- 1 Tbsp fresh lemon juice
- Garnish: parsley sprigs
Chicken Alfredo Pizza

You can use fresh pizza dough or from a can
- Creamy Alfredo Sauce:
- Vegetable cooking spray
- 1 1/2 lb bakery pizza dough
- All-purpose flour
- Plain yellow cornmeal
- 3/4 cup creamy Alfredo sauce
- 1 (6oz) pkg fresh baby spinach thoroughly washed
- 2 cups chopped cooked chicken
- 1 1/2 cups (6oz) shredded fontina cheese
- 2 tsp lemon juice
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 garlic clove, minced
- 1 tsp olive oil
- 1 (10oz) container refrigerated Alfredo sauce
- 1 Tbsp chopped fresh or 1 tsp dried basil
- 1/2 tsp freshly ground pepper
Feta Cheese Truffles

1. Beat first 5 ingredients at medium speed until well combined
- 4 oz cream cheese, softened
- 1 (4oz) container crumbled feta cheese
- 2 tsp finely chopped onion
- 1/2 tsp Worcestershire sauce
- 1/4 tsp pepper
- 1/2 cup chopped fresh parsley
Chicken Scaloppine with Spinach and Linguine

1. Snap off and discard tough ends of asparagus; cut asparagus in half crosswise 2
- 1 lb fresh asparagus
- 1 (16 oz) pkg linguine
- 1 (9oz) pkg fresh spinach
- 3/4 cup all-purpose flour
- 2 tsp salt, divided
- 1 1/2 tsp pepper, divided
- 6 chicken cutlets (about 1 1/2 lb)
- 2 Tbsp butter
- 2 Tbsp olive oil
- 2 Tbsp all-purpose flour
- 2 1/2 cups chicken broth
- 1/4 cup capers, drained and rinsed
- 1 Tbsp lemon zest
- 3 Tbsp fresh lemon juice
- 2 plum tomatoes, seeded and chopped
- Grated Parmesan cheese
Cornbread Griddle Cakes

1. Stir together all ingredients just until moistened
- 2 cups self-rising cornmeal
- 1 cup all-purpose flour
- 1 1/2 cups milk
- 1/3 butter, melted
- 2 large eggs, lightly beaten
- 1 Tbsp sugar

Beer Cheese Bread

This recipe makes a lot, but you can freeze for up to a month
- 1 (2lb) block sharp Cheddar cheese, shredded
- 1 small onion, minced
- 2 garlic cloves
- 1/2 tsp hot sauce
- 1/4 tsp ground red pepper
- 1 (12 oz) bottle amber beer, at room temperature
- Salt and Pepper to taste
- Saltine crackers
- Garnish: sweet-hot pickle slices
Sweet Potato Squares with Lemon Garlic Mayonnaise

- Lemon-Garlic Mayonnaise:
- 2 lbs sweet potatoes, peeled and cut into 32 1 inch cubes
- 2 Tbsp olive oil
- 1/2 tsp pepper
- 1/4 tsp salt
- 1/2 lbs spicy smoked sausage cut into 32 1 inch pieces
- 32 wooden picks
- Lemon-Garlic Mayonnaise
- Garnish: fresh thyme sprigs
- 1 cup mayonnaise
- 2 Tbsp chopped fresh parsley
- 2 tsp minced garlic
- 1 tsp lemon zest
- 2 Tbsp fresh lemon juice
- 1/2 tsp pepper
- 1/4 tsp salt
