Chicken and Smoked Sausage Gumbo

In a large stainless-steel pot, heat the oil over moderate heat
- 3 tablespoons cooking oil
- 3 tablespoons flour
- 1 onion, chopped
- 2 ribs celery, chopped
- 1 green bell pepper, chopped
- 1 10-ounce package frozen sliced okra
- 1 bay leaf
- 1 1/2 teaspoons dried thyme
- 1 teaspoon dried oregano
- 2 teaspoons salt
- 1/4 teaspoon fresh-ground black pepper
- 1/4 teaspoon cayenne
- 1 3/4 cups crushed canned tomatoes in thick puree (one 15-ounce can)
- 1 quart canned low-sodium chicken broth or homemade stock
- 1/2 pound smoked sausage, halved lengthwise and cut crosswise into 1/4-inch slices
- 1 pound boneless, skinless chicken breasts, cut into 3/4-inch pieces
- 3/4 cup long-grain rice

- 2 +1/3 cups all purpose flour
- 1 +1/2 cups sugar {I reduced this from 2 cups}
- 2 tsp. baking soda
- 1 +1/2 tsp. salt
- 1 tsp. cinnamon
- 1 tsp. nutmeg
- 1/4 tsp. ground ginger
- 1 can (15 oz) solid pumpkin
- 1/2 cup olive oil
- 1/2 cup applesauce {I used cinnamon applesauce}
- 4 eggs, lightly beaten
- 2/3 cup water
- 1/2 cup chopped pecans
- 1/4 cup craisins
Planked Salmon with Pinot Noir-Berry Sauce

Soak a cedar plank in water for 2 to 4 hours
- 1 cup Pinot Noir
- 1 small shallot, minced
- 2 1/4 cups blackberries, roughly chopped
