Chocolate Chipotle Chili

In a large pot over medium-high heat, saute onions and peppers in oil for 5 minutes

Crabmeat Empanadas with Grilled Corn Salsa & Poblano Cream Sauce

Make the grilled corn salsa: Soak the corn (with husks) in cold water for 30 minutes
- For the grilled corn salsa:
- 6 medium ears corn
- 3 Tbs. fresh lime juice (from 1 medium lime)
- 2 Tbs. sunflower or vegetable oil

- For the poblano cream sauce:
- 3 medium poblano peppers

- 2-4 chipotles in adobo (depending on your heat tolerance) chopped
- 1 teaspoon ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon nutmeg
- Juice of one lime
- 1 tablespoon of olive oil
- Salt and black pepper to taste
- Sour cream
