Margarita Cake

Heat oven to 350°F (or 325°F for dark or nonstick pan)
- 1 1/2 cups coarsely crushed pretzels
- 1/2 cup sugar
- 1/2 cup butter or margarine, melted
- 1 box Betty Crocker® SuperMoist® white cake mix
- 1 1/4 cups bottled nonalcoholic margarita mix
- 1/3 cup vegetable oil
- 1 tablespoon grated lime peel
- 3 egg whites
- 1 container (8 oz) frozen whipped topping, thawed
- Additional grated lime peel, if desired
Bourbon Pecan Pralines

In a heavy saucepan over low heat, melt 4 tablespoons butter
- 4 tablespoons butter
- 1 cup granulated sugar
- 1 cup light brown sugar, packed
- dash salt
- 1/2 cup heavy cream
- 2 cups pecan halves, lightly toasted*
- 2 teaspoons vanilla extract
- 1 tablespoon Bourbon
- butter for baking sheet
Citrus Cookies

Preheat oven to 325 degrees
- 1/2 cup Butter, softened {I use I Can’t Believe It’s Not Butter}
- 1/4 cup Sugar
- 1 Egg Yolk
- 1 teaspoon Vanilla
- 1 1/4 cup Flour
- 1/4 teaspoon Salt
- 1 teaspoon lemon zest, finely chopped
- 2-3 tablespoons fresh lemon juice
- 1 teaspoon orange zest, finely chopped
- 2-3 tablespoons fresh orange juice
- Powdered Sugar for dusting
Nutella Rocky Road Bars

For the Crust: Spray a 14-x-4-inch rectangular tart pan with baking spray, or butter
- Crust:
- 1 ½ cup chocolate cookie crumbs (I used some flourless chocolate cookies, but I think chocolate graham crackers or Oreos would be good as well)
- 6 tablespoons unsalted butter, melted
- Filling:
- ¾ cup Nutella
- 4 ounces semisweet chocolate chips
- 2/3 cup heavy whipping cream
- 1 cup marshmallows (more if you want)
- ½ cup peanuts (or more if you want)
Cranberry Orange Cinnamon Rolls

1. Add yeast to 1 cup of lukewarm water
- For the rolls:
- 2 packages of yeast, dissolved in 1 cup lukewarm water
- 6 tablespoons shortening
- 1 cup granulated sugar
- 7 cups all purpose flour (you might need a little extra if the dough is still sticky)
- 2 cups hot water
- 2 large eggs, beaten
- 1 tablespoon salt
- 1/2 stick unsalted butter, softened
- 1 cup light brown sugar
- 1 1/2 cups dried cranberries
- 1 tablespoons ground cinnamon
- Zest of 2 large oranges
- 3/4 cup granulated sugar
- For the orange sugar topping:
- Zest of 1 large orange
- 1/2 cup granulated sugar
- For the frosting:
- 4 tablespoons unsalted butter, softened
- 2 cups powdered sugar
- 2 tablespoons milk
- 1 1/2 tablespoons orange zest
- 2 tablespoons fresh orange juice

1. Place rack in center of oven, and preheat to 375 degrees F
- Pecan Crumb Topping:
- 1/2 cup all-purpose flour
- 1/3 cup brown sugar
- 1/8 teaspoon salt
- 1/8 teaspoon ground cinnamon
- 1/2 cup chopped pecans
- 4 tablespoons butter, melted
- Muffins:
- 1 cup whole wheat flour
- 1 cup all-purpose flour
- 1 1/2 teaspoons baking soda
- 1/8 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 cup low-fat buttermilk
- 3 tablespoons honey
- 1 cup light brown sugar
- 5 tablespoons butter, melted
- 2 large eggs
- 2 teaspoons fresh minced ginger
- 1 teaspoon pure vanilla extract
- 1 cup fresh diced peaches with skins
Hot Buttered Yum Chex Mix

1. In large microwavable bowl, place cereals
- 4 cups Honey Nut Chex® cereal
- 2 cups Cinnamon Chex® cereal
- 1/4 cup butter or margarine
- 1/4 cup packed brown sugar
- 2 tablespoons honey
- 3/4 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 teaspoon rum flavoring
- 2 cups miniature marshmallows
White Chocolate Raspberry Cheesecake

Make crust: Finely grind almonds and crumbs in a food processor and add butter, blending until combined
- For the crust:
- 1 cup slivered almonds
- 2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- For filling:
- 8 ounces fine-quality white chocolate
- 4 (8-ounces each) packages cream cheese, softened
- 1/2 cup plus 2 tablespoons sugar
- 4 whole large eggs
- 2 large egg yolks
- 2 Tbs. all-purpose flour
- 1 tsp. vanilla
- 2 cups fresh raspberries (I felt like it could have used a few more raspberries, so next time I make it I'm going to try it with 3-4 cups of raspberries instead)
- Melted chocolate, whipped cream, fresh raspberries, for garnishmen
