Banana Chocolate Chip Pancakes with Peanut Butter Syrup

For pancakes, In a medium sized bowl, combine flour, baking powder, baking soda, and salt

- 1-1/2 cups all purpose flour (I used white whole wheat)
- 3 Tbs. sugar
- 2 tsp. baking powder
- 1-1/2 tsp. baking soda
- 1/4 tsp. salt
- 1-1/2 cups buttermilk

- 1 Tbs. oil
- 1 large egg
- 2 small to medium size ripe bananas
- 1/4 cup mini chocolate chips tossed with 2 teaspoons flour

- 1 cup maple syrup

- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 3 eggs
- 2 teaspoons vanilla
- 1 1/4 cup milk
- FROSTING
- 2 cups unsalted butter, softened
- 2 teaspoons vanilla
- 1/2 teaspoon salt
- 8 cups confectioners’ sugar
- 2-3 tablespoons milk
- 4 cups chopped chocolate (or chocolate chips or mini chocolate chips)
- (DIP) Melted chocolate (such as 3-4 14oz. bags chocolate candy melts)
- (GARNISH) Graham cracker crumbs
Tin Roof Crunch Chex Mix

1. In large microwavable bowl, mix cereals and peanuts
- 5 cups Rice Chex® cereal
- 2 cups Cocoa Puffs® cereal
- 1 cup dry-roasted peanuts
- 3/4 cup packed brown sugar
- 1/3 cup creamy peanut butter
- 1/4 cup butter or margarine
- 3 tablespoons light corn syrup
- 1 cup semisweet chocolate chunks

1 In medium bowl, mix all ingredients except cheese, chilies and tortilla chips
- 1 1/2 cups sour cream
- 1/2 cup mayonnaise or salad dressing
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic salt
- 1/4 teaspoon onion powder
- 1/4 teaspoon paprika
- 1 cup shredded Cheddar cheese (4 ounces)
- 1 can (4.5 ounces) Old El Paso® chopped green chiles, drained
- Tortilla chips, if desired
BBQ Chicken Enchiladas

1. Whisk the BBQ sauce into the enchilada sauce you just prepared
- Enchilada Sauce:
- 1/2 cup vegetable oil
- 4 tablespoons flour
- 3 tablespoons chili powder
- 1 16-oz can tomato sauce
- 2 cups water or chicken broth
- 1 teaspoon ground cumin
- 3-4 cloves garlic, freshly pressed
- 1 teaspoon onion powder or flakes
- salt to taste
- 1 . Heat the oil in a skillet over medium-high heat. Reduce heat to medium and stir in the flour and chili powder. Cook until lightly browned, stirring constantly to prevent burning.
- 2 . Gradually add the rest of the ingredients, continuing to stir to prevent the sauce from sticking and burning. Cook for approximately 10 minutes, or until sauce begins to thicken.
- BBQ Chicken Enchiladas
- Enchilada sauce, above (or a 28-ounce can of commercial sauce, but really – why would you let someone else season your enchilada sauce when making it is so quick and easy?)bbq-chicken-enchiladas
- 1/2 cup BBQ sauce
- 2 cans (14 ounces each) of shredded chicken or 1.5 pounds of boneless chicken, cooked and shredded
- 1 medium sweet onion, chopped
- 1 tablespoon BBQ seasoning
- 1/8 teaspoon cayenne pepper (more or less to taste)
- 6 ounces of shredded cheese (we used all cheddar, but Debbie used a combination of cheddar and colby jack)
- 8 tortillas

- 1/4 cup butter, melted
- 1 large egg
- 1/2 cup buttermilk
- 1/2 cup milk
- 1/2 teaspoon vanilla
- 2 teaspoons lemon juice
- 3/4 cup fresh or frozen blueberries, thawed
- Cheesecake Filling Ingredients:
- 8 ounces (227 grams) cream cheese, room temperature
- 1/3 cup (65 grams) granulated white sugar
- 1 large egg
- 1/2 teaspoon pure vanilla extract
- Lemon Buttercream Frosting Ingredients:
- 1/2 cup crisco (white) shortening
- 1/2 cup butter, softened
- 4 cups confectioner’s sugar
- 1/2 teaspoon pure vanilla extract (can use clear if you want the frosting to be snow white)
- 1/2 teaspoon imitation almond flavoring
- 1/2 teaspoon imitation butter flavoring
- 1 tablespoon lemon juice
- lemon zest, if desired
- 2-4 tablespoons sweet milk for thinning
- 4-5 drops yellow food coloring
