Sweet Pumpkin Fried Wonton Desserts

Mix together the pumpkin, brown sugar, cinnamon, nutmeg, cloves, vanilla and cream cheese
- 3/4 cup canned pumpkin puree
- 3 tablespoons brown sugar
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon vanilla extract
- 1/4 cup cream cheese, softened at room temperature
- 40 wonton wrappers
- 1 egg
- 1 tablespoon water
- oil, for frying (canola, peanut, vegetable)
- powdered sugar
Multigrain Rolls

Combine the oat bran and flax seeds in a small bowl
- For the dough:
- ½ cup oat bran
- ¼ cup flax seeds
- ½ cup boiling water
- 1 cup warm milk (105-110˚ F)
- 2 ¼ tsp. instant (rapid rise) yeast
- ¼ cup honey
- 2 large eggs
- 2/3 cup old-fashioned (not instant) oats
- 7 oz. (1¼ cups) whole wheat flour
- 1 tsp. freshly ground black pepper
- 1 tbsp. salt
- 15 oz. (about 3 cups) all-purpose flour
- Oil, for greasing the bowl
- For the topping:
- 1 large egg yolk
- 1 tbsp. water
- 2 tbsp. mixed seeds (poppy, sesame, fennel, etc.)
- Coarse salt, for sprinkling

- 1/2 * 1/2 cup dried cranberries
- 1/4 * 1/4 cup boiling water
- 1/4 * 1/4 cup butter, softened
- 1/2 * 1/2 cup chunky peanut butter*
- 1/3 * 1/3 cup packed brown sugar
- 1 * 1 cup all-purpose flour
- 1/2 * 1/2 cup finely chopped peanuts

- Filling:
- 1 (.25 ounce) package active dry yeast
- 1/4 cup warm water (105 degrees to 115 degrees)
- 1 cup warm milk (110 to 115 degrees F)
- 1/4 cup shortening
- 1/4 cup sugar
- 1 teaspoon salt
- 1 egg, lightly beaten
- 3 3/4 cups all-purpose flour
- 1 cup sugar
- 1/2 cup butter or margarine, softened
- 2 tablespoons grated orange peel (about two oranges worth)
- Glaze:
- 1 cup confectioners' sugar
- Juice from two oranges

- For the muffins:
- 2 ¼ cups all-purpose flour
- 1 tbsp. baking powder
- ¼ tsp. salt
- 1 cup plus 2 tbsp. granulated sugar, divided
- 2 large eggs
- ¾ cup eggnog
- 5 1/3 tbsp. unsalted butter, melted
- 1 tsp. almond extract
- 1 ½ cups coarsely chopped cranberries
- For the topping:
- ½ cup sugar
- ½ cup all-purpose flour
- ½ tsp. ground cinnamon
- 4 tbsp. unsalted butter, slightly softened
- ½ cup chopped pecans (optional)

To make the pastry, combine the flour, cornmeal, sugar and salt in a bowl
- For the pastry:
- 1 ¾ cups all-purpose flour
- 6 tbsp. white cornmeal (I used yellow)
- 2 tsp. sugar
- ¾ tsp. salt
- 12 tbsp. unsalted butter, cut into chunks
- 6 tbsp. sour cream
- ½ cup ice water
- For the filling:
- 4 lb. Granny Smith apples (about 8 large)
- ½ cup sugar
- ½ cup water
- 3 tbsp. honey
- 3 tbsp. lemon juice
- ½ tsp. ground cinnamon
- 1 ½ cups fresh cranberries

- Egg wash:
- 1 /2 cup milk
- 2 1/2 teaspoons active dry yeast
- 3 cups unbleached all-purpose flour
- 8 tablespoons cold unsalted butter, cut into 12 pieces
- 1/4 cup sugar
- 1 teaspoon salt
- 2 large eggs
- 2 large egg yolks
- 1 additional large egg, beaten with a pinch of salt
Coconut Shrimp with Pineapple Cilantro Dip

- 1 1/3 cups pumpkin puree
- 1 teaspoon cinnamon
- 3/4 teaspoon ground ginger
- 1/8 teaspoon nutmeg, freshly ground
- 1 1/2 cups heavy cream
- 1 teaspoon pure vanilla extract
