Peach Crumb Tartelettes

Heat oven to 400 degrees F
- 1 (9 inch) pie dough round
- 1 1/2 cups finely chopped ripe peaches
- 1 tablespoon cornstarch
- 1/4 cup granulated sugar
- 2 1/2 teaspoons lemon juice
- 1/4 teaspoon vanilla extract
- 1/2 cup all purpose flour
- 1/3 cup packed brown sugar
- 1/8 teaspoon salt
- 3 tablespoons cold unsalted butter, cut into small pieces
Tiramisu Brownies

Preheat oven to 350 degrees
- 10 TBSP unsalted butter, cut into pieces, divided
- 1 cup plus two tablespoons all-purpose flour
- 1/4 ¼ cup unsweetened cocoa powder
- 1/2 ½ tsp. baking powder
- 1/2 ½ tsp. salt
- 1 tsp. instant coffee
- 8 ounces semisweet or bittersweet chocolate, chopped
- 4 ounces room-temperature mascarpone cheese
- 1 1/2 1 ½ cups granulated sugar, divided
- 4 large eggs, divided
- 1 cup pound cake thinly sliced, then cut into 2-inch pieces (I used Sara Lee because it was cheap and very dense so I knew it would hold together well)
Lemon Pepper Shrimp Scampi

1. Cook orzo according to package directions, omitting salt and fat
- 1 cup uncooked orzo
- 2 tablespoons chopped fresh parsley
- 1/2 teaspoon salt, divided
- 7 teaspoons unsalted butter, divided
- 1 1/2 pounds peeled and deveined jumbo shrimp
- 2 teaspoons bottled minced garlic
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon black pepper
Bacon Cheddar Dog Treats

- 2 cups whole wheat flour
- 1/4 cup bacon fat, melted
- 1/2 cup shredded cheddar cheese
- 3/4 cup milk

- 1 small box Cook & Serve Chocolate Pudding - NOT instant
- 1 box Chocolate Cake Mix {I used Devil's Food}
- 2 cups milk
- 1 cup chocolate chips
- 1 cup nuts, chopped
- Frosting
- 1 8 oz. tub Cool Whip frozen whipped topping
- 1/4 cup Marshmallow Fluff
- 2-3 drops coloring - optional
- Valentine Heart Sprinkles - optional
S'mores Creme Brulee

Preheat oven to 300 degrees F
- 2 cups heavy cream
- 2/3 cup semisweet or milk chocolate chips
- 3 tablespoons granulated sugar
- 6 large egg yolks
- 1 teaspoon vanilla extract
- 1/4 cup graham cracker crumbs
- 1 cup mini marshmallows
Mushroom Risotto

1 Melt 2 Tbsp butter in a medium skillet over medium-high heat
- 4 * 4 Tbsp butter
- 2 * 2 cups flavorful mushrooms such as shiitake, chanterelle, or oyster mushrooms, cleaned, trimmed, and cut into half inch to inch pieces
- 2/3 * 2/3 cup cognac, vermouth, or dry white wine
- 3/4 * 3/4 cup heavy cream
- 7 * 7 cups chicken stock* (use vegetable stock for vegetarian option)
- 1 * 1 Tbsp olive oil
- 1/3 * 1/3 cup of peeled and minced shallots (OR 1/3 cup of yellow or white onion, finely chopped)
- 1 3/4 * 1 3/4 cups arborio rice
- 1/3 * 1/3 cup freshly grated Parmesan cheese
- * Salt and freshly ground black pepper
- 2 * 2 Tbsp chopped fresh parsley
Buffalo Chip Cookies

Could also use peanut butter chips or butterscotch chips
- Melt together:
- 1 c. butter
- 1 c. shortening
- Add:
- 2 c. brown sugar
- 2 c. white sugar
- 4 eggs, beaten
- 2 tsp. vanilla
- Sift together:
- 4 c. flour
- 2 tsp. soda
- 2 tsp. baking powder
- Blend in:
- 2 c. oatmeal
- 1 c. pecans
- 2 c. Post Toasties
- 1 c. coconut
- 1 c. (or 1 bag) of chocolate chips
Pumpklin White Chocolate Chunk Cookies

Preheat oven 350F. Line two baking sheets with parchment
- 2 ½ cup ap flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- pinch nutmeg
- ½ cup butter, room temperature
- 1 cup white sugar
- 1/2 cup brown sugar, packed
- 1 egg
- 1/2 teaspoon vanilla extract
- 1 cup pumpkin puree
- 1 cup chocolate chips or raisins
- ½ - 1 cup pecans or walnuts (optional)
Bananas Foster Bread

- 1 1/2 cups mashed ripe banana
- 1 cup packed brown sugar, divided
- 6 tablespoons butter, melted and divided
- 1/4 cup cognac or dark rum, divided (I used Meyer’’s Dark Rum)
- 1/3 cup plain fat-free yogurt (I used sour cream)
- 2 large eggs
- 6.75 ounces all-purpose flour (about 1 1/2 cups)
- 1/4 cup ground flaxseed (I used old fashion oatmeal that I ground in my mini food processor)
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/8 teaspoon ground allspice
- Cooking spray
- 1/3 cup powdered sugar
- a splash of heavy cream, optional
