- 2 1/2 pounds bone-in short ribs
- Kosher salt
- 5 tablespoons olive oil, plus more for drizzling
- 1 small onion, roughly chopped
- 1 stalk celery, roughly chopped
- 1 carrot, roughly chopped
- 4 cloves garlic, smashed
- 1/4 cup tomato paste
- 2 cups good red wine
- 2 cups water
- 1 sprig rosemary
- 2 bay leaves
- 2 cups peeled, diced parsnips
- 2 medium sugar pie pumpkins or kabocha squashes (about 3 pounds each)
- 1 Granny Smith apple, peeled and diced
- 1/4 cup chopped walnuts
- 1/4 cup golden raisins
- 1/4 cup brown sugar
- 1/4 cup dark rum (optional)
- 1 teaspoon minced ginger
- 1/2 teaspoon freshly grated nutmeg
- 1 teaspoon ground cinnamon
