Pork Chops With Spring Vegetables & Mustardy Pan Gravy

Heat 2 tablespoons of the oil in a large skillet over medium-high heat
- 3 tablespoons olive oil
- 4 bone-in pork chops (1 inch thick; about 2 1/2 pounds total)
- Kosher salt
- Freshly ground black pepper
- 1 cup low-sodium chicken broth
- 2 tablespoons whole-grain mustard
- 4 shallots, peeled and quartered
- 1 bunch radishes, halved
- 1/2 pound sugar snap peas, halved
- 1 cup frozen peas, thawed
- Chopped fresh chives, for serving

1.Heat oil in a large skillet over high heat
- 1 tablespoon plus 1 teaspoon extra-virgin olive oil
- 2 large yellow onions, chopped
- 1/2 teaspoon salt, divided, plus more to taste
- 2 tablespoons plus 2 cups water, divided
- 1 teaspoon dried thyme or 2 teaspoons fresh
- 1 large Yukon Gold potato, peeled and diced
- 2 tablespoons cream sherry or Marsala
- 4 cups vegetable broth, store-bought or homemade
- 24 cups gently packed spinach (about 1 1/4 pounds), any tough stems trimmed
- Pinch of cayenne pepper
- 1/4 teaspoon ground nutmeg
- 1/2 cup crumbled fresh goat cheese (2 ounces), plus more for garnish
- 2 tablespoons butter
- 1 tablespoon fresh lemon juice, or more to taste

- 3 boneless loin pork chops, approximately 3/4-inch thick, at room temperature, and cut just through the silver skin every few inches around the circumference of each chop
- 3/4 cup apple cider
- 2 tablespoons brown sugar
- 1 tablespoon brandy
- 1 tablespoon Dijon mustard
- Kosher salt and freshly ground black pepper

- 6 cups low sodium vegetable broth
- 1 medium yellow onion, finely chopped (1 cup)
- 4 large garlic cloves, minced (1 heaping tablespoon)
- 2 Roma tomatoes, roughly chopped (about 2 cups)
- 1 tablespoon + 1 teaspoon Italian seasoning*
- salt (1-1/2 teaspoons)
- freshly ground black pepper (1/4 teaspoon)
- 2 15-ounce cans white beans, drained and rinsed
- 1/4 cup finely chopped fresh basil
- Note:
