- 1/2 cup firmly packed dark brown sugar
- 1/2 cup whole-grain mustard
- 6 medium red potatoes, peeled (if desired) and quartered
- 2 1/2 teaspoons kosher salt
- 4 tablespoons unsalted butter
- 1/2 cup sour cream
- 3/4 cup (3 ounces) grated Cheddar
- 1/2 teaspoon freshly ground black pepper
