Beth's Yellow Squash Casserole

Put all ingredients into 2 qt
- 2 cups frozen cooked squash or 1 pkg. fresh squash
- 1 can cream of chicken soup
- 2 carrots, grated
- 1 onion, grated
- 1 cup sour cream
- salt and pepper to taste
- 1/2 pkg. Pepperidge Farm Bread Stuffing
Sour Cream Sauce for Fruit

Beat butter and powdered sugar at medium speed with an electric mixer until smooth
- 1/3 c. butter, softened
- 1 c. powdered sugar
- 1/2 c. sour cream
- 1/2 tsp. lemon juice
- 1/4 tsp. vanilla
Prize--Winning Meat Loaf

Combine beef with oats, onion, salt, pepper, tomato juice and egg
- GLAZE:
- 1 1/2 lbs. lean ground beef
- 3/4 cup rolled oats, uncooked
- 1/4 cup finely chopped onion
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 cup tomato juice
- 1 egg, beaten
- 2-4 TBSP. ketchup
- 1-2 TBSP. brown sugar
- 1/2 tsp. dry mustard
Strawberry Butter

Mix all ingredients together with mixer or blender
- 1 (10 oz.) pkg. frozen strawberries, thawed
- 1 c. butter
- 1 c. sifted confectioner's sugar
Lone Star Pot Roast

In a dutch oven, brown roast in oil
- 1 boneless beef chuck roast ( 3-3 1/2 lbs.)
- 2 TBSP. cooking oil
- 1 can (14 1/2 oz.) tomatoes with liquid, cut up
- 1 can ( 0z.) chopped green chilies
- 2 TBSP. taco sseasoning mix
- 2 tsp. beef bouillon granules
- 1 tsp. sugar
- 1/4 c. cold water
- 3 TBSP. all-purpose flour
Corn Pudding with Bacon and Onion

Fry bacon in skillet. Drain on paper towels
- 3 or 4 slices bacon, fried crisp and crumbled
- 1 medium onion, chopped
- 3 cups uncooked yellow corn kernels, frozen and thawed or canned and very well-drained if fresh corn is unavailable
- 3 large eggs, beaten
- salt and pepper to taste
- 1 1/2 TBSP. bacon grease
- 1 1/2 TBSP. butter or canola oil
- 3 TBSP. sugar or Splenda
- 1 1/8 cups of scalded milk
Delicious Cookie Bars

Preheat oven to 350 degrees
- 1/2 c. margarine or butter
- 1 1/2 c. graham cracker crumbs
- 1 (14 oz.) can Eagle Brand sweetened condensed milk (not evaporated)
- 1 (12 oz.) package semi-sweet chocolate chips
- 1 cup peanut butter chips
Asparagus Rollups

Drain asparagus well. Remove crust from bread; roll each slice flat with rolling pin
- 1 (14 oz.) can asparagus spears
- 1 loaf thin-sliced white bread (20-22 slices)
- 1 (8 oz.) pkg. cream cheese, softened
- 1 (3 oz.) pkg. blue cheese
- 1 egg, slightly beaten
- 1 stick butter, melted
Cheese Wiches

Mix butter and cheese in food processor, then add remaining ingredients except bread
- 1 stick unsalted butter, softened
- 2 jars Kraft Old English spread cheese
- 1/2 tsp. onion powder
- 3/4 tsp. Worcestershire sauce
- 3/4 tsp. dillweed
- 1/2 tsp. Tabasco sauce
- 1 1/2 regular loaves Pepperidge Farm thinly-sliced white sandwich bread
Sauteed' Mushrooms

Stir together lemon juice, soy sauce, and sugar
- 1 TBSP. fresh lemon juice
- 1/2 TBSP. soy sauce
- 1 tsp. sugar
- 2 TBSP. olive oil
- 10 0z. mushrooms, quartered
- 1 TBSP. unsalted butter
- 1 garlic clove, chopped
