Mindless Meatball Minestrone

Pour the chicken and beef broth into a 4
- 2 cans (14.5 ounces each) fat-free chicken broth
- 1 can (14.5 ounces) fat-free beef broth
- 1 bag (1 pound) frozen mixed vegetables
- 1 bag (18 ounces) frozen meatballs
- 1 can (14.5 ounces) stewed tomatoes
- 1/2 cup dried macaroni noodles
- 1 can (15 ounces) light red kidney beans
- 1 1/2 teaspoons dried Italian seasoning
- 6 tablespoons grated Parmesan cheese
Sugar Cookie Glaze

Combine all ingredients with mixer and beat until smooth
- 1 cup confectioner's Sugar
- 3 1/2 tsp milk
- 2 tsp light corn syrup
- 1/4 tsp vanilla
- 3 to 4 drops food coloring
Roasted Corn Soup with Smoked Chile Cream

I first served this recipe working for Samantha Ploch – helping with a large dinner party
- Smoked Chile Cream:
- 6 ears corn, roasted (about 5 cups)
- 2 Tbsp unsalted butter
- 1 medium onion, finely dices
- 1 Tbsp minced garlic
- 2 cups dry white wine
- 5 cups chicken stock
- 2 cups heavy cream
- 1/2 smoked chili cream (see below)
- 1/2 cup sour cream
- 2 tsp pureed canned chipotles
- 1 tsp fresh lime juice
- Salt and freshly ground pepper

Cook sausage. Add onions, cook one minute longer
- 8 oz pork sausage
- 1/3 cup sliced green onions
- 1 can cream of chicken soup
- 1 soup can milk
- 1 can corn, drained
- 1/2 cup shredded swiss cheese
- 1/4 tsp hot pepper sauce
MINT OREO BALLS OF HEAVEN

Mix crushed Oreos and cream cheese with electric mixer on high until thoroughly blended (approximately 2 minutes)
- 1 (17-ounce) Cool Mint Crème Double Stuff Oreos
- 1 (8-ounce) Cream Cheese, softened
- 2 Cups Semi-Sweet Chocolate Chips
- 1 Tbsp Shortening
Southwestern Corn Chowder

Heat a dry large pot over medium heat
- 1 pkg. Center Cut Bacon, cut into 1/2” pieces
- 1 Medium Onion, diced
- 1 Poblano or Jalapeno Chili, seeded and diced
- Coarse Salt
- 1/2 tsp Ground Cumin
- Pinch of Cayenne Pepper
- 1 cup Dry White Wine (substitution: 1/4 c white or apple cider vinegar)
- 1 lb. Yukon Gold Potatoes, peeled and cut into 1/2” cubes
- 5 c. Chicken Broth
- 3 c. Corn
- 1 cup heavy Cream
- 1/2 cup Fresh Cilantro, chopped
Spring Chicken with Barley Soup

Heat oil in a large sauce-pan over medium-high heat; add chicken breasts and sear on both sides
- 1 Tbsp extra-virgin olive oil
- 1/2 cup finely chopped onion
- 1/2 cup finely chopped celery
- 2 cloves garlic, divided
- 6 cups chicken broth
- 2 boneless-skinless chicken breasts
- 1/3 cup pearl barley
- 1 15-ounce can diced tomatoes
- 1 cup trimmed and diagonally sliced asparagus
- 1/2 tsp coarse salt
- freshly ground pepper to taste
- 1/2 cup lightly packed torn fresh basil
- 1 Tbsp orange zest
Tom Ka Gai (Best Yet)

Bring coconut milk to a boil in medium saucepan
- 3 3/4 c. Light Coconut Milk
- 6 oz Boneless, Skinless Chicken Breast, cut into thin strips
- 2 Fresh Lemongrass Stalks, trimmed and thinly sliced
- 2 Scallions, thinly sliced
- 3 to 4 Fresh Dragon Chiles, thinly sliced into rings
- 5 Tbsp Fresh Lime Juice
- 3 Tbsp Thai Fish Sauce
- 3 Sprigs Fresh Cilantro, shredded, plus more leaves for garnish
Taco Soup

Coarsely chop onion. Brown meat and onion in large stockpot
- 2 lbs. lean ground beef (I used turkey)
- 1 onion
- 1 can (4 oz.) diced green chilies
- 2 cans corn
- 4 cans Mexican stewed tomatoes (I used: 2 Mexican, 1 normal, and 1 original Rotel)
- 1 can pinto beans
- 1 can kidney beans
- (I used 2 cans navy beans)
- taco seasoning packet
- ranch dressing/dip packet
- optional toppings: chopped cilantro, shredded cheese, chips, sour cream
