Pumpkin Soup

Lightly brown onions with the olive oil in a thick-bottomed soup pot
- Optional garnishes:
- 4 cups pumpkin/ heirloom squash (cooked)
- 2 cups onions (chopped)
- 4 Tbs olive oil
- 4 cloves garlic
- 4 cups chicken broth
- 2 cups white wine
- freshly ground pepper (Tobin did ½ tsp)
- kosher or sea salt (Tobin did 1 tsp)
- 1 cup heavy cream (special occasion) OR 1 cup milk (weeknight dinner)
- grated nutmeg
- chopped crystallized ginger
- croutons or
- freshly popped popcorn
Corn and Zucchini Pan Souffle

Preheat oven to 400 degrees
- 5 eggs, separated
- 1/2 tsp salt
- 1/3 cup sliced green onions
- 3 Tbsp. butter
- 1 Tbsp all-purpose flower
- 2/3 cup milk
- 1 cup shredded sharp cheddar cheese
- dash cayenne pepper
- dash ground nutmeg
- 2 cups fresh corn kernels
- 1 1/2 cups shredded zucchini
- 1/4 cup finely shredded Parmesan cheese
- Tomato Relish
- 1 1/2 cups halved grape tomatoes
- 1/2 cup sliced green onions
- 3 Tbsp lime juice
- 3 Tbsp snipped fresh cilantro
- 2 Tbsp minced, seeded jalapeno pepper
- 1/2 tsp salt
- 1/2 tsp cumin
Tortellini with Spinach and Cherry Tomatoes

Cook tortellini according to package directions, omitting salt and fat
- 1 (9-ounce) package fresh three-cheese tortellini
- 1/4 cup fat-free, less-sodium chicken broth or vegetable broth
- 2 teaspoons olive oil
- 2 teaspoons bottled minced garlic
- 1/2 to 3/4 teaspoon crushed red pepper
- 2 cups cherry tomatoes, halved
- 1 tablespoon chopped fresh basil (I used pesto b/c it is what I had)
- 1/4 teaspoon salt
- 1 (6-ounce) package fresh baby spinach
Chipotle Salsa

Tobin entered this at the 5th annual McKearin Salsa-Thon in Hawaii!
- 4 medium-sized fresh ripe tomatoes
- 1 small bunch of cilantro
- 3/4 fresh lime (juiced)
- 1/4 medium onion
- 1 tsp salt
- 1 tsp garlic salt
- 1/2 tsp pepper
- 1 Tbsp adobo sauce
- 1/2 tsp red pepper flake
- 2 to 3 chipotle chiles, canned in adobo sauce
Grilled Romaine

Cut the romaine heart in half lengthwise
- 1 heart of romaine lettuce
- 1 tsp white balsamic vinegar
- 1 tsp sunflower seeds
- freshly ground black pepper
LOW FAT CHEWY FRUIT AND OATMEAL BARS

This is a favorite. But, I add 1 cup of white chocolate and substitute 1 cup of oatmeal for 1 cup of whole or slice...
- 3/4 cup firmly packed Brown Sugar
- 1/2 cup Granulated Sugar
- One 8-oz container vanilla or plain low-fat yogurt
- 2 egg whites, lightly beaten
- 2 Tbsp vegetable oil
- 2 Tbsp fat-free milk
- 2 tsp vanilla
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp salt
- 3 cups Quaker Oats (quick or old-fashioned, uncooked) (use 2 cups oats/1 cup almonds)
- 1 cup diced dried mixed fruit, raisins or dried cranberries
- 1 cup white chocolate chips
CANDICE’S ARTERY CLOGGING BROWNIES

- 8 ounces semi-sweet chocolate
- 1 1/3-Stick butter
- 5 eggs
- 3 cups sugar
- 1 1/2 cup all-purpose flour
- 1/2 cup liquor (Irish cream, amaretto0
- 2 cups chopped nuts (optional)
- 1 tbsp vanilla

In a bowl, mix together soy sauce, sherry, brown sugar, cornstarch, and ginger
- 1-1/2 pound Flank Steak, Trimmed Of Fat And Sliced Very Thin Against The Grain
- 1/2 cup Low Sodium Soy Sauce
- 3 Tablespoons Sherry Or Cooking Sherry
- 2 Tablespoons Brown Sugar
- 2 Tablespoons Cornstarch
- 1 Tablespoon Minced Fresh Ginger
- 8 ounces, weight Fresh Snow Peas, Ends Trimmed
- 5 whole Scallions, Cut Into Haf-inch Pieces On The Diagonal
- Salt As Needed (use Sparingly)
- 3 Tablespoons Peanut Or Olive Oil
- Crushed Red Pepper, For Sprinkling
