Quinoa Cakes

Stir the quinoa, eggs, and salt together in a medium bowl
- Recipe:
- (adapted from Super Natural Every Day)
- 2 1/2 cups cooked quinoa
- 4 eggs, beaten
- 1/2 tsp sea salt
- 1/4 cup chopped fresh basil
- 1 white onion, finely chopped (yellow would be fine too)
- 1/3 cup freshly grated parmesan cheese
- 3 cloves garlic, finely chopped
- 1 cup bread crumbs (plus a few extra tablespoons if needed)
- 1-3 tbsp olive oil
Flour Tortillas

Mix dry ingredients in a large bowl
- 3 cups Unbleached Flour
- 2 tsp Baking Powder
- 1 tsp Salt
- 4-6 Tbsp Vegetable Shortening or Lard
- 1 1/4 cups warm Water
PEANUT BUTTER POOPIES

In a medium bowl stir together flour, cocoa powder, and baking soda; set aside
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/2 cup butter softened
- 1/2 cup plus 2 tbsp granulated sugar
- 1/2 cup packed brown sugar
- 3/4 cup peanut butter
- 1 egg
- 1 tbsp milk
- 1 tsp vanilla
- 3/4 cup powdered sugar
Korean Salad

Whisk together above ingredients for dressing, allow to sit overnight before serving
- Dressing:
- 1/2 cup Sugar
- 1/3 cup Ketchup
- 2 Tbsp Worcestershire Sauce
- 1 Medium Onion, grated
- 3/4 cup Olive Oil
- 1/4 cup Cider Vinegar
- Salad:
- Baby Spinach
- Red Leaf Lettuce
- Slivered Almonds
- Canned Mandarin Oranges
Gingerbread

In a bowl, beat shortening and sugar until smooth
- 1/2 cup Shortening, softened
- 1/2 cup Brown Sugar, packed
- 1 egg
- 1/2 cup Molasses
- 1 1/2 cups Flour
- 1/2 tsp Salt
- 3/4 tsp Baking Soda
- 1/2 tsp Ginger
- 1/2 tsp Cinnamon
- 1/2 cup Boiling Water
Lime Cilantro Dressing

In a blender container, combine lime juice, orange juice concentrate, red onion, 1 Tbsp cilantro, salt and pepper
- 1/4 cup Lime Juice
- 2 Tbsp Frozen Orange Juice Concentrate
- 1 1-inch Wedge Red Onion
- 3 Tbsp Sipped Fresh Cilantro
- 1/4 tsp Salt
- 1/4 tsp Ground Black Pepper
- 3/4 cup Vegetable Oil
Honey Bun Cake

Preheat oven to 350°F. Generously grease bottom only of 9x13 pan
- 1 Betty Crocker Super Moist Butter Recipe Cake Mix
- 2 Sticks Butter or Margarine, softened
- 4 Eggs
- 8 oz Sour Cream
- 1/2 cup Packed Brown Sugar
- 1/3 cup Chopped Pecans
- 2 tsp Ground Cinnamon
- 1 cup Powdered Sugar
- 1 Tbsp milk
- 1 tsp Vanilla
Pam's Strawberry Salad

Clean spinach and remove stems; mix with strawberries and almonds
- 1 Pint sliced strawberries
- 1 small package slivered almonds
- Fresh baby spinach
- 1/2 cup Sugar
- 1 Tbsp Poppy Seeds
- 2 Tbsp Sesame Seeds
- 1 1/2 tsp Dried Minced Onion
- 1/4 tsp Paprika
- 1/4 cup Apple cider Vinegar
- 1/4 cup Red Wine Vinegar
- 1/2 cup Oil
Red Wine Vinaigrette

- 1/3 cup Red Wine Vinegar
- 1 tsp Dried Italian Seasoning
- 1 tsp Parsley Flakes
- 1/4 tsp Garlic Powder
- 1/8 tsp Pepper
- 1/8 tsp Salt
Peppery Cheese Bread

Preheat oven to 350° F. Grease the bottom and 1/2 inch up the sides of an 8x4x2-inch loaf pan; set aside
- 2 1/2 cups All-purpose flour
- 1 tablespoon Sugar
- 1 1/2 teaspoons Cracked Black Pepper
- 1 tsp Baking Soda
- 3/4 tsp Salt
- 2 Eggs, beaten
- 8 oz Carton Plain Low-Fat Yogurt
- 1/2 cup Cooking Oil
- 1/4 cup Milk
- 1 tablespoon Spicy Brown Mustard
- 1 cup Shredded Cheddar cheese
- 1/4 cup Green onions, thinly sliced
