  • 4 large sweet potatoes
  • 1/2 cup extra virgin olive oil
  • Salt and freshly ground black pepper
  • 1/4 cup red wine vinegar or sherry vinegar
  • 1 medium red bell pepper, cored, seeded, and ­ quartered
  • 2 teaspoons ground cumin
  • 1 tablespoon grated orange zest (optional)
  • 1/2 cup sliced scallion
  • 1/2 cup minced fresh mint or parsley leaves
  • 1 or 2 fresh minced chiles (jalapeño, Thai, serrano, or habanero), or to taste

Heat oven to 375 degrees. Whisk dry ingredients together

  • 3 cups flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 12 ounces beer
  • 1 egg + 2 Tblsp water (optional for brushing top of bread, before baking)
  • May add cheese and herbs to your liking. 1 tsp. dried (or 1 TBSLP fresh) rosemary & 2 cloves of minced garlic; oregano; thyme; cheddar cheese; parmasean cheese.
  • May substitue 1/2 cup oats for 1/2 cup of the flour.
