Pumpkin Gingersnap Cookies

1. In the bowl of a stand mixer, beat the butter and sugar together until creamy and smooth
- 1/2 cup of butter, at room temperature
- 1 cup granulated sugar, plus more for rolling the cookies
- 1/2 cup of pure pumpkin (I used Libby's canned pumpkin)
- 1/4 cup of molasses
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/3 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons cinnamon
- 1 1/2 teaspoons ground ginger
- 1 teaspoon ground cloves
- 1/2 teaspoon salt
Roasted Sweet Potato Salad with Red Pepper Vinaigrette

Here is another potato-vinaigrette combo: The red pepper dressing is tart, sweet, and spicy, with a touch of cumin
- 4 large sweet potatoes
- 1/2 cup extra virgin olive oil
- Salt and freshly ground black pepper
- 1/4 cup red wine vinegar or sherry vinegar
- 1 medium red bell pepper, cored, seeded, and quartered
- 2 teaspoons ground cumin
- 1 tablespoon grated orange zest (optional)
- 1/2 cup sliced scallion
- 1/2 cup minced fresh mint or parsley leaves
- 1 or 2 fresh minced chiles (jalapeño, Thai, serrano, or habanero), or to taste
- 1/4 cup raisins (optional)
Empanada Dough

1. Combine the flour and salt in a bowl or food processor
- 3 cups of all purpose flour
- 1/4 teaspoon of salt
- 6 oz. unsalted butter cut into 12 pieces, fresh out of the fridge
- 1 egg
- 4-5 tablespoons of water
- 1 egg beaten with a little milk
Beer Bread

Heat oven to 375 degrees. Whisk dry ingredients together
- 3 cups flour
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 tablespoon baking powder
- 12 ounces beer
- 1 egg + 2 Tblsp water (optional for brushing top of bread, before baking)
- May add cheese and herbs to your liking. 1 tsp. dried (or 1 TBSLP fresh) rosemary & 2 cloves of minced garlic; oregano; thyme; cheddar cheese; parmasean cheese.
- May substitue 1/2 cup oats for 1/2 cup of the flour.
Classic Diner-Style Chocolate Pie

- FOR THE CRUST:
- 30 chocolate wafer cookies (about 6 ounces)
- 1 tablespoon sugar
- 6 tablespoons unsalted butter, melted
- FOR THE FILLING:
- 1/2 cup sugar
- 3 tablespoons chocolate malt Ovaltine
- 1 teaspoon salt
- 1/4 cup cornstarch
- 5 large egg yolks
- 2 cups whole milk
- 1/2 cup heavy cream
- 5 ounces dark chocolate (60 to 70 percent cacao), coarsely chopped
- 2 teaspoons whiskey
- 1 teaspoon pure vanilla extract

- 1 cup shortening
- 2 cups (packed) brown sugar
- 2 eggs
- 1 teaspoon pure vanilla extract
- 3 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cream of tartar
- 1/2 teaspoon salt
- 1 cup broken, toasted nuts
