Chicken Empanada

For the dough: 1. Combine the flour and salt in a bowl or food processor
- For the dough:
- 3 cups of all purpose flour
- 1/4 teaspoon of salt
- 6 oz of unsalted butter cut into 12 pieces, fresh out of the fridge
- 1 egg
- 4-5 tablespoons of water
- 1 egg, beaten with a little milk
- For the filling:
- You'll need:
- 1 1/2 lb boneless chicken breast, cubed
- 1 medium-sized onion, finely chopped
- 1 tbsp garlic, minced
- 1 cup potato, diced
- 1 cup carrot, diced
- 1 cup peas
- 2 tbsp cooking oil
- 1-2 tbsp flour
- 4 oz chicken stock
Peanut Butter Whoopie Pies

- 1 3/4 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder (not Dutch process)
- 1 1/2 teaspoons baking soda
- 1/2 teaspoon fine salt
- 4 tablespoons unsalted butter, softened
- 1/4 cup vegetable shortening
- 1/2 cup granulated sugar
